What are the most basic skills of home cooking (Chinese style)?
Cook rice
Stir fry vegetables
Steam fish/meat/prawns

Describe the process of stir frying vegetables.


Preparation:
Wash and cut 2 ppl's portion of vegetables
Prepare 1tbsp of cooking oil (or estimate), 1tsp chopped garlic, 1tsp oyster sauce or light
sauce

Estimated cooking time: 15min

Put 1 tablespoon (flat) of cooking oil into nonstick pot in a puddle and heat it up for 15
seconds (set hotplate to maximum i.e. 12). Bubbles may or may not form. Add one teaspoon
of chopped garlic and stir it around for 1/2 a minute to turn the garlic evenly brown.
Add in vegetables (half a packet or 6 stalks or 2 ppl's portion of chye sim), and stir around for
1-2min. If the vegetables are too dry, add 1-2 tbsp of water. Cover it and leave it to simmer
for 2min.
You may test the crunchiness of the vegetables now. Vegetable leaves should be crunchy
not limp.
Uncover and add 1 TSP of light sauce or oyster sauce. Mix it around quickly.
Scoop, garnish with fried shallots and serve.
