Chicken Caesar Salad
Ingredients:
2 boneless, skinless chicken breasts
Salt and black pepper, to taste
2 tablespoons olive oil
1 head romaine lettuce, washed and chopped
1/2 cup Caesar dressing (store-bought or homemade)
1/4 cup grated Parmesan cheese
1 cup croutons (store-bought or homemade)
Lemon wedges, for garnish (optional)
Instructions:
1. Prepare the Chicken: Season the chicken breasts with salt and black
pepper on both sides. Heat olive oil in a skillet over medium-high
heat. Once hot, add the seasoned chicken breasts to the skillet. Cook
for about 6-7 minutes per side, or until golden brown and cooked
through. Remove the chicken from the skillet and let it rest for a few
minutes. Once rested, slice the chicken into thin strips.
2. Prepare the Caesar Dressing: In a small bowl, whisk together
mayonnaise, grated Parmesan cheese, Dijon mustard, minced garlic,
anchovy paste (if using), fresh lemon juice, Worcestershire sauce, salt,
and black pepper until smooth and well combined. Adjust seasoning
according to taste preferences.
3. Assemble the Salad: In a large mixing bowl, combine the chopped
romaine lettuce and Caesar dressing. Toss until the lettuce is evenly
coated with the dressing. Add the grated Parmesan cheese and
croutons to the bowl and toss again to combine.
4. Add the Chicken: Arrange the sliced chicken breast strips on top of
the dressed salad.
5. Garnish and Serve: Optionally, garnish the Chicken Caesar Salad with
lemon wedges for an extra burst of freshness. Serve immediately as a
main dish or appetizer.
6. Optional Variations: You can customize your Chicken Caesar Salad
by adding additional toppings such as cherry tomatoes, sliced
cucumbers, avocado slices, or hard-boiled eggs.
