CHAPTER I

THE PROBLEM AND ITS SCOPE

INTRODUCTION

Rationale

Snack centers have become an integral part of the lives of the people by

providing quick, delicious, and diverse snack to satisfy our cravings. It often offers

a range of option such as chips, cookies, sandwiches, pastries and beverages.

Snack food is one of the food market's fastest-growing segments in recent years

that played a big role in contemporary life. These small bites of food can also be

great for students in stressful periods and it also provide a quick and convenient

way to refuel energy levels throughout the day. When a person eats healthy

snacks, the brain activity changes physically. It can help maintain adequate

nutrition if one has a poor appetite but cannot eat full meals, such as due to an

illness. With the increasing demand for healthier options, snack companies have

introduced a range of nutritious alternatives, allowing us to make mindful choices

about our health without comprising on taste.

Jagna should not be exempted from establishing a snack centers. It is a

progressive location, especially when considering its population. The area is

abundant with educational institutions, indicating a vibrant academic community.

Additionally, Jagna is a 3rd-class municipality in the province of Bohol, serving as

2

one of the commercial trading centers with daily market activities and a port town

with ferries connecting islands to Camiguin, Nasipit, and Cagayan, Jagna attracts

a crowd of pier passengers regularly. However, researchers have observed a

challenge arising from the fact that there are numerous restaurants in the area,

but very few businesses focus on selling snacks. Moreover, the majority of these

snack options are not health-conscious.

It is in this context that the proponent, Mr. Sethniel Siaboc, an

entrepreneur and a resident of Poblacion, Jagna, Bohol, is interested in setting up

a business beside his Milk Tea Shop which is the Happy In Happy Out Snack Stop.

The proponent believed that this business will capture the market because most

of the stores do not have healthy products to sell. Moreover, there are many

residents in the area and with an entrepreneurial energy and a clear vision, the

proponent is carefully examining every aspect of this enterprise. His attention to

this feasibility study, which includes market analysis and financial estimates,

demonstrates a commitment to ensuring the success and longevity of the Happy

In Happy Out Snack Stop.

Happy In Happy Out Snack Stop is a distinctive, appealing and offered

nutritious snack like vegetable chips with various flavors like carrot, eggplant,

potato and water spinach also known as kangkong, making it stand out from other

snacks in Poblacion, Jagna, Bohol. The business committed to honing the craft of

making vegetable chips and the service through dine-in and take out orders may
3

find great financial opportunities as consumer demand for healthier food options

rises. The title “Happy In Happy Out Snack Stop,” for this feasibility study

embodies the essence of the envisioned venture. The emphasis on “Happy In”

implies a delightful and enjoyable experience within the establishment, while

“Happy Out” denotes a favorable impression that lasts after the visit. The use of

“Happy In Happy Out” implies a positive experience for customers entering and

leaving the snack stop.

Furthermore, healthy vegetable chips are snack foods produced from actual

vegetables that are sliced or dried, then baked or fried to give a crunchy, tasty

texture similar to that of chips. These vegetable chips are a favorite among

consumers who are health-conscious because of frequently have less fat, calories,

and sodium than conventional potato chips. The vegetable chips market has

witnessed significant growth due to factors such as the increasing consumer

demand for healthier snacking options, the rise of plant-based diets, and the

growing awareness of the nutritional benefits offered by vegetables. (1: 2024)

The establishment of Happy In Happy Out Snack Stop would not only

benefit the proponent and to the local infrastructure but also provides the

community with healthier snack choices, aligning with the progressive nature of

the location. Hence, the researchers are motivated by the desire to improve a

healthier snack choice and aims to make a positive impact to consumers’ health

and well-being by introducing Happy In Happy Out Snack Stop to Jagnaanon.

Theoretical Background

Theory. Maslow's Hierarchy of Needs Theory serves as the theoretical

foundation for this study (2:2022). According to Maslow, that when a person

lacks sufficient food, their primary focus will be on finding sustenance, which can

hinder their ability to address other needs such as safety, social connections, self-

esteem, and personal development. Once the basic needs, including food, are

fulfilled, individuals can then move towards higher levels of the hierarchy, seeking

fulfillment through social relationships, self-esteem, and self-actualization.

However, it is important to fulfill more fundamental demands before reaching this

ultimate goal.

Legal Basis. This research is anchored under Republic Act No. 10611

otherwise known as the "Food Safety Act of 2013" (3:2013), state shall

maintain a farm to fork food safety regulatory system that ensures a high level of

food safety, promotes fair trade, and advances to the global competitiveness of

Philippine foods and food products. The primary goal of this is to make nation’s

system for regulating food safety stronger. Furthermore, by encouraging safe

production methods, hazard assessments, and risk-based preventative controls,

the legislation emphasizes the prevention of foodborne infections. International

food safety standards are encouraged to be adopted by law, and fines for

infractions are stipulated. It is intended to safeguard consumer confidence,

preserve public health, and guarantee that food products in the Philippines adhere
5

to all applicable safety regulations. In order to preserve safe and high-quality food

items for the Filipino people, the act is essential in regulating the food industry.

In addition, Republic Act No. 7394, also known as "The Consumer Act

of the Philippines" (4:1992), creates the Philippine Consumer Act and consists

of 173 articles arranged into six titles. The state's policies are designed to

safeguard consumer interests, advance the overall out fundamental consumer

rights, such as the right to knowledge, the ability to select, the right to remedy,

and protection against risks to one's health and safety. Through the Department

of Health, the state sets standards and quality measures for food, drugs, devices,

and cosmetics, ensuring a safe supply, promoting the rational use of drugs and

devices, and strengthening the Bureau of Food and Drugs. The act also emphasizes

the importance of consumer education and information dissemination,

encouraging programs that enhance consumer awareness of their rights and

responsibilities. It also mandates product standard and provides guidelines for

proper labeling and packaging to ensure that consumers are informed about the

product purchased. The act also gives regulatory organizations the authority to

enforce its rules and take legal action against unfair commercial practices, such as

the Department of commercial and Industry (DTI). Penalties are imposed for

violations to deter unscrupulous business practices and protect consumers from

fraudulent or deceptive transactions.

Related Literature

The following significant literatures were included for the additional

information of the study conducted:

According to Slurrp Desk in an article entitled “Exploring Nutrient-

Packed Vegetable Chips” (5:2023), Vegetable chips are a delectable and

healthy substitute for regular potato chips. Choose the preferred vegetables first,

such as kale, sweet potatoes, or potatoes. Cut it into thin, even slices, toss with a

little oil and favorite seasonings, then bake or fried until crispy. While frying can

result in a somewhat different texture and flavor, baking is generally a healthier

choice. In addition to being a delicious snack, these handmade vegetable chips

are an excellent way to increase the amount of vegetables in the diet. It may also

add the own creative touches to the seasonings, which makes it a guilt-free,

adaptable treat for any occasion. A delicious approach to satisfy the hunger for a

crunchy snack and get more vegetables in diet is with vegetable chips. Everybody

may find the favorite vegetable chip kind, be it the nutrient-rich greens of spinach,

the colorful flare of beets, the earthy sweetness of sweet potatoes, the leafy

healthiness of kale, the brilliant crunch of carrots, the mild zing of zucchini, or the

comforting parsnip chips.

Furthermore, an article published by Future Market Insights entitled

“Veggie Chips Market” (6:2023), Veggie chips are gaining immense popularity

delicious and healthier as compared to fried chips. The growing consumer

8

inclination toward healthier snacks option and plant-based food is expected to

boost market growth during the forecast period. The wide availability of veggie

chips in different flavors like carrot, sweet potato, spinach, turnip, and beetroot in

grocery stores and supermarkets is driving the sales of the veggie chips market.

Other factors driving the growth of the veggie chips market are increased

urbanization and increased consumer inclination towards nutritious and natural

ingredient food products. On the other hand, in veggie chips market in the Asia

Pacific is witnessing significant growth in recent years, driven by factors such as

the increased trend of snacking, and increased availability of veggie chips in the

region.

Related Studies

Below were the studies that provide additional information regarding the

researcher’s study.

In the study conducted, entitled “Filipinos getting more health

conscious but want further support from food industry to improve diets”

by Press Release (7:2021), Food Industry Asia (FIA) reports that while most

Filipinos (81%) think it is the personal responsibility to have a balanced, healthful

diet, it also desire greater help from the business. Hailed as the "first of its kind"

for the Philippines, the paper, Healthier Product Reformulation in the Philippines,

shows a significant change in Southeast Asian healthy consumption trends. Filipino

9

consumers are becoming more concerned of the health; of those asked, 56% said

generally eat a healthy diet.

The majority of consumers (99%) have expressed interest in changing to

healthy eating habits; nonetheless, the most important areas to improve diets

include eating more fruits and vegetables (41%) and consuming less salt (34%),

sugar (32%), and fat (32%).The majority of consumers (79%) also think that food

firms ought to voluntarily alter the recipes and product formulas in order to

encourage customers to make and maintain these better decisions.

Moreover, a study conducted by Violeta Alexandra Ion et.al entitled

“(Organic Vegetable Chips: Exploring Romanian Consumers’ Preferences

in Relation to Socio-Demographic Factors)” (8:2023), achieve the main

objective of understanding Romanian consumers’ preferences for a healthy

lifestyle by selecting food products with high nutritional value, particularly

vegetable chips. Similar to worldwide trends, the Romanian food market is

undergoing continuous changes as consumers increasingly prioritize health and

environmental concerns. To obtain vegetable chips that can be considered healthy

snacks, the use of organic vegetables is crucial in the proper processing technique,

such as drying and decreased postharvest waste, resulting significant savings in

storage and transportation costs.

In this connection, the findings of the study show that among the 1060

respondents, 699 (65.9%) as preferred on classic potato chips, 210 (19.8%) in

10

organic vegetable chips, and 151 (14.2%) who do not consume chips

environmental concerns. The analysis presented in this study focuses only on those

909 participants who consume chips, regardless of the type of chips consumed. Of

the 909 respondents, 699 (76.9%) prefer only classic potato chips, and 210

(23.1%) prefer organic vegetable chips. The prevalence of respondents who prefer

classic potato chips can be observed in comparison to those who prefer organic

vegetable chips. The obtained results in this study provide valuable insights into

the factors that influence the preference for organic vegetable chips in Romania.

This information can be useful for both chip manufacturers and retailers in

developing effective strategies to promote the consumption of healthy snacks.

These insights can enhance the awareness of chip producers regarding

consumption preference patterns for snacks in Romania, which is a relatively less-

explored niche. This study is among the few that enable a better understanding of

Romanian preferences, and these preferences represent important factors that

encourage the consumption of healthy snacks.

Furthermore, a study conducted by Piwowar A. et.al "Dried

Vegetables Snacks Review of the Process Technologies and

Consumption Preferences Among Students" (9:2017), indicated that

vegetables should be a large part of any rational diet because of the nutritional

content and phytonutrient characteristics. The study was conducted to examine

the frequency and types of vegetable intake by students, as well as the level of
11

acceptability for new products. The results show that the knowledge of the

respondents in the sphere of effects of vegetable consumption can be termed as

very good. 94% of the respondents agreed with the statement that "high

consumption of vegetables reduces the risk of obesity, cancer, and cardiovascular

diseases". However, there was concern about the respondents’ knowledge on

recommended consumption of fruits and vegetables. 24% of the respondents

claimed that the “recommended daily consumption of fruits and vegetables was

about 100 g (1 portion)”, while 25% of the respondents had no opinion on the

subject. Almost all of the respondents like vegetables”. As the questionnaire

surveys show, the willingness of the respondents to purchase snacks made of dried

root vegetables is the highest with respect to carrot products. The respondents

highly assessed visual advantages of dried vegetable snacks, in particular the color

and shape. To the question “Do you like eating vegetables”, over 55% of the

students responded “absolutely yes” and another 39% of the respondents replied

“rather yes”. It is recommended to continue monitoring the nutrition model among

students with respect to vegetables, in particular dried products. As a result of

popularization of new technologies, in the near future there will be an increased

supply of those products on the market.

Conceptual Background

Research Instrument

The study utilized the questionnaires in gathering the desired data. The

questionnaires composed of three important parts. The first part contains the

profile of the respondents that contains the classification, age, gender, civil status,
20

monthly income and monthly allowance (students only). The second part of the

questionnaire focused on the problems encountered by the respondents on other

existing snack centers in Poblacion, Jagna, Bohol. Lastly, the third part involved

the feasibility factors on establishing Happy In Happy Out Snack Stop in Poblacion,

Jagna, Bohol.

Data Gathering Procedure

Before distributing the questionnaires to the one hundred sixty-three (163)

respondents, a letter of permission was sent to the office of the Local Government

of Jagna, noted by the Dean of CBA Department of BIT International College for

the approval of the survey to be conducted. When the approval was granted, the

researchers personally distributed the questionnaires to the respondents and the

latter were given ample time to answer. Then, retrieved the questionnaires from

the respondents on agreed time. After which, the responses of the questionnaires

were tallied and arranged in tables for the purpose of analysis and interpretations.

Data Analysis

After the retrieval of questionnaire, the raw data were tallied, tabulated,

and analyzed using the percentage formula:

𝐟
P=𝐧 X 100

Where:

P= percentage
21

f= frequency

n= total number of respondents

The weighted mean [WM(M)] of every item was also computed with the

formula:

M = Sum of (F x Y)/N

Where:

M = the weighted mean

F = the frequency

Y = the rating weight

N = total number of respondents

A hypothetical range was set for each scale with the corresponding

interpretation guide and equivalents using Likert scale as follows:

Weight Scale Code Range

4 Strongly Agree SA 3.26 - 4.00

3 Agree A 2.51 - 3.25

2 Disagree D 1.76 - 2.50

1 Strongly Disagree SD 1.00 - 1.75

Statistical Treatment

To determine the degree of correlation in the responses of the respondents,

the data were subjected to the Analysis of Varience (ANOVA) using the formula:
22

F = MSb

MSw

Where:

F = analysis varience

MSb = means squares between groups

MSw = means square within groups

To find the values of MSb and MSw, the formula used was:

MSb = SSb/dfb

MSw = SSw/dfw

Where:

SSb = the sum of the square between groups

Dfb = degree of freedom between groups

SSw = the sum of squares within groups

Dfw = degree of freedom within groups

To provide the validity of the obtained F factor, it was checked on the

table of the critical value at 0.05 level of significance at a given degree of

freedom (df) of [M-(N)-(M-1)].
