Pancit Lomi Recipe
Pancit Lomi is a Filipino noodle soup known for its thick and savory broth, chewy noodles, and assorted
toppings. Here's a recipe to make Pancit Lomi:
Ingredients:
1 onion, quartered
1 tablespoon peppercorns
500g fresh lomi noodles (can be substituted with thick egg noodles or ramen noodles)
1 onion, minced
Fried garlic
Instructions:
1. In a large pot, combine pork or chicken bones, sliced pork belly or chicken breast, onion, garlic,
bay leaves, and peppercorns. Cover with water and bring to a boil. Skim off any scum that rises
to the surface. Reduce heat to low, cover, and simmer for about 1 to 1.5 hours until the meat is
tender and the broth is flavorful.
2. While the broth is simmering, prepare the noodles according to package instructions. Rinse with
cold water, drain, and set aside.
3. Once the meat is tender, remove it from the broth and shred or slice it thinly. Strain the broth
and discard the solids. Reserve the broth for later use.
4. In a separate pot or large saucepan, heat cooking oil over medium heat. Sauté minced onion and
garlic until fragrant.
6. Add soy sauce and oyster sauce to the broth. Adjust the seasoning with salt and pepper
according to your taste.
7. Add the cooked noodles to the simmering broth and cook for a few minutes until heated
through.
8. To serve, ladle the hot soup and noodles into bowls. Top with sliced cooked meat, shrimp, hard-
boiled egg slices, fried garlic, and chopped spring onions.
9. Serve Pancit Lomi hot with calamansi or lemon wedges on the side for squeezing over the soup.
