Industrial Applications of Enzymes
Applications of Enzymes
Today, enzymes are used for an increasing range of application:
(Bakery, cheese making, starch processing , tenderizing of meat,
production of fruit juice and other drink).
Here they can improve texture, appearance, nutritional value and
may generate desirable flavor and aroma.
The applications of enzymes can be classified into three major
categories: industrial enzymes, analytical enzymes, and medical
enzymes.
Uses of Enzymes:
Production of bulk product such as :
Glucose and fructose
In food processing and food analysis.
In laundry and automatic dishwashing detergent.
The textile, pulp and paper and animal feed
industries.
Clinical diagnosis and therapy.
Genetic engineering .
Enzymes produced for industry include: Protease, Amylase,
Glucose isomerase, Glucose Oxidase, Renin, Pectinase and
Lipase

Disaccharides
Two sugars can link to each other by losing water from OHs to
form disaccharides.
Four important disaccharides: sucrose, lactose, maltose, and
cellobiose, which all have the same molecular formulas,
C12H22O11. The following figure shows important disaccharides.
Sucrose and lactose are the most abundant and most important
disaccharides of natural origin.
Maltose and cellobiose are repeating units of polymeric starch and
cellulose, respectively.
Disaccharides may hydrolyze to form two monosaccharide
molecules.
