This is a simple, flavorful one-pot dinner recipe
combining pasta and curry -- you'll get the best
of both worlds!

INGREDIENTS
1 onion | diced
4 cloves garlic | minced
2-3 tbsp red curry paste | to taste
1-2 green chilis | minced; omit for less heat
1 tsp curry powder
1/2 tsp cayenne | omit for less heat
1/2 tsp black pepper
1 cup vegetable broth
8 oz dry pasta of choice | use GF if needed
1 14-oz can coconut milk | lite or full-fat
1 14-oz can cooked chickpeas
INSTRUCTIONS
1. In a large pot, fry the onion and garlic in
some oil/water until fragrant, around 4-5
minutes.
