Soybeans and kudzu are two of the hundreds of plants that people eat as
vegetables. Want to see more? Take a trip to Veggie City.
Visit a farmers’ market and you can find veggies of many shapes and colours from all
over the world. There are veggies like nowhere else, for example water chestnuts. You
can also discover some, like squash blossoms, beet greens and kudzu. Surprisingly but
people eat them. We believe that the US farmers are at the top of the world list for growing
vegetables. But a long time ago, there were plenty of them in other parts of the world.
There were onions in Egypt, cabbage in Germany, carrots in ancient Greece and spinach
in China. In fact, the United States grow a bigger quantity of the soybeans of the whole

them, they turn into flour. Some chemical processes twist the vegetable into little pieces
of pure protein. “Pure” means that it hasn’t got anything else. You don’t mix it with other
things. What it all has is just 100% protein. This soy-meat is called “texturized vegetable
protein”. It sounds funny, but it looks like real meat, tastes like real meat, and chews like
real meat. The main difference is that the real meat is more expensive. This soy-meat
hasn’t got much fat content; it has got no bad cholesterol. That’s why our bodies can be
healthier when we eat it. Check out your grocery store to see some sausages, bacon or
burgers that have got soybeans.

Another key thing you can learn in Veggie City is how you can eat your veggies. There
are a lot of billboards saying: “Eat your veggies raw!”. Uncooked veggies have all their
quality food elements. A lot of them taste excellent-just be sure you wash them well
first. Dip them in a little salad dressing and enjoy!
