Breaded scallops make for a delicious appetizer or main dish. Here's a simple recipe to make breaded
scallops at home:
Ingredients:
2 eggs, beaten
Instructions:
1. Pat the scallops dry with paper towels to remove excess moisture. Season both sides of the
scallops with salt and pepper according to your taste preference.
2. Set up a breading station with three shallow bowls or plates. Place the flour in one bowl, the
beaten eggs in another bowl, and the breadcrumbs (mixed with Parmesan cheese if using) in the
third bowl.
4. Dip the floured scallops into the beaten eggs, ensuring they are fully coated.
5. Next, coat the scallops in the breadcrumb mixture, pressing gently to adhere the breadcrumbs
to the scallops and ensure an even coating.
6. Heat cooking oil in a large skillet over medium-high heat. You'll want enough oil to come about
halfway up the sides of the scallops.
7. Once the oil is hot, carefully add the breaded scallops to the skillet in a single layer, making sure
not to overcrowd the pan. Cook the scallops for about 2-3 minutes on each side, or until they
are golden brown and crispy.
8. Use a slotted spoon or tongs to transfer the cooked scallops to a plate lined with paper towels to
drain excess oil.
9. Serve the breaded scallops hot with lemon wedges on the side for squeezing over the scallops.
