Lab report: pineapple enzyme for making jelly

Introduction:
If you want to make pineapple jelly, what should you do? If adding fresh pineapple in the jelly
solution ,can it still be jelly? For this question, using three different pineapples to try to make
jelly,which are fresh pineapples, pineapples that are heated for 15 seconds and pineapples
that are heated for 2 minutes.

Hypotheses:
The pineapples that are fresh or heated for 15 seconds cannot form jelly because there are
enzymes in it, but heated for 2 minutes and no pineapple one’s can form jelly because the
enzymes are denatured and the other one is no enzyme.

Materials:
Falcon tubes(50ml) x4
Thick slice of pineapple x2
200ml beaker x2
Forceps x1
Plastic spoon x1
Gelatin powder x8g in falcon tube
Marker for labeling x1
Knife and paper for cutting pineapple x1
Plastic trough for disposing of wastes x1
Falcon tube(50ml) for measuring 10ml x1

Methods:
First, cut the pineapples into 15 pieces that are 1 cm cube, then take 5 pieces of pineapples
to heat in the oven for 15 seconds and take another 5 pieces of pineapples to heat in the
oven for 2 minutes.
Second,put the pineapples into the four falcon tubes.
Third, add 8g of gelatin powder into a 200 ml-beaker and add 80 ml boiling water in the
beaker and stir with the plastic spoon until the gelatin powder dissolves.when the gelatin
powder was dissolved, and the solution in the four falcon tubes that each one had 10 ml.
Fourth, wait 10-20 minutes for the reaction of jelly.
Finally, place all the waste into the plastic trough provide.

Result:

Discussion:
For tube 1, it had fresh pineapple in the solution,so that it could not form jelly.
For tube 2, the temperature for heating the pineapple was not enough that the enzymes
could not denature. It became more active because of the heat.
For tube 3, the temperature of heating is too much that over the optimal
temperature which let the enzymes denatured.So that it could form jelly in the tube.
For tube 4,because there was no pineapple, the reaction to form jelly was successful.
In daily life, if want to add fresh pineapple in jelly, We need to heat the pineapple before
adding in the solution.

Conclusion;
After the experiment, it was known that if wanted to add fresh pineapple into jelly, it needed
to heat until the enzymes in pineapple denatured otherwise it could not make jelly.It found
that if the temperature over the enzymes optimum, the enzymes would be denatured which
couldn't work anymore.
