Chapter 1

The Problem and Its Background

This chapter presents the introduction, background and purpose of the study,

statement of the problem, research framework, scope and limitation of the study,

significance of the study, and definition of terms that will give assistance to the

researcher to explain and show the idea of this research.

Introduction

Cookery education plays a vital role in the development of students; it gives an

opportunity to them to discover their potential in terms of cooking. The Impact of cookery

education among these students goes beyond learning basic culinary skills such as safety,

cleanliness, and more. Is the impact of cookery education an advantage to grade 11 students? Or

a disadvantage? What cookery education really is?

Cookery Education is a technical-vocational program that develops skills in planning,

preparing, cooking, and serving various menus. Students are taught how to make or cook meat,

appetizers, salads, vegetables, sandwiches, eggs, desserts and more. It can also be the skill in

classifying the kitchen tools, equipment, and paraphernalia. Cookery Education

also teaches students how to clean and organize things which they can apply at their home.

Cookery Education also enhances employability skills like teamwork, time management,

communication, and organization.

Cookery education promotes creativity and originality among students. As they experiment

with different ingredients, flavors, and cooking techniques, students are encouraged to think

outside the box and come up with new and exciting dishes. This encourages them to be more

open-minded, adaptable, and resourceful, qualities needed for jobs.

Additionally, cookery education promotes healthy eating habits and teaches students the

importance of nutrition and food safety. By learning how to prepare and cook their own meals,

students are more likely to make healthier food choices and avoid processed and fast-food

options. This can have a positive impact on their overall well-being and reduce the risk of

chronic diseases such as obesity, diabetes, and heart disease.

We make research about this topic to elaborate what cookery education is. We aimed to

know about the impact of cookery education among grade 11 Technical-Vocational-Livelihood

students in San Isidro Senior High School. We know that cookery education can be applied in

our home and also in our daily life. We considered that

education that will be experienced by the grade 11 Technical-Vocation. We conducted this

research to demonstrate the effects of cooking education experienced by grade 11 Technical-

Vocational-Livelihood students.

Background and Purpose of the Study

Cookery Education is also known as culinary education, it refers to the study of

cooking and preparing food. It provides students with the knowledge and skills needed

in various establishments of food services, including restaurants, bakeries and pastry

shops, catering companies, and more.

According to Enriquez (2015), many schools now offer Technical-Vocational-

Livelihood (TVL) courses while others are considering it because of the implementation

of K-12. However, High school students, particularly those in the Technical-Vocational-

Livelihood strand (cookery), need to be equipped with the right competencies so that

they will have an edge in the future. The researcher believes that the result of this

research will be significant for those who are in the Technical-Vocational- Livelihood

(cookery) strand in terms of producing competent high school students in food services.

Based on observation and experience, culinary is the most awaited module for

students because it involves kitchen activities and encourages active participation. The

researcher aims to discover the students' experience in cooking relative to recipes,

methods, and cleanliness.

The purpose of determining the impact of cookery education among Technical-

Vocational-Livelihood (TVL) students is to analyze the effectiveness of the cookery

education program in providing students with knowledge and skills related to cooking.

By measuring the impact of cookery education, educators can determine the strengths

and weaknesses of the students, identify areas for improvement, and enhance the

quality of education provided to TVL students in the field of cookery. This assessment

can help ensure that students are sufficiently prepared for future careers in the culinary

industry and contribute to their overall academic and professional development.

grade 11 TVL students illustrates the three-dimensional pattern through frames which

explain the input, the process, the output, and the feedback.

The first frame, the input, includes the profile of the respondents such as sex,

age, and section.

The second frame, the process, includes the development and validation of

research instruments, including questionnaire and interview.

Statement of the Problem

This study aims to know the Impact of Cookery education among Technical Vocational

Livelihood Students of San Isidro Senior High School. Specifically, it sought to answer

the following questions:

1. What is the profile of the respondents in terms of:

1.1 Age;

1.2 Sex; and

1.3 Grade level

2. What are the benefits of cookery education for students in the grade 11 technical-

vocational-livelihood students of San Isidro Senior High School?

3. What are the recommendations that you can give for the awareness of others on the

impact of culinary education?

Assumptions

The respondents were aware of the impact of cookery education.

The respondents received advantages through cookery education.

The respondents chose the TVL track to expand their knowledge about cooking.

The respondents found that cookery education is relevant to their daily lives.

To Students. This study will give students the opportunity to expand their

knowledge and skills in the field of cookery education. This will help them find potential

jobs and careers in the culinary industry. It can bring more inspiration and motivation to

students to continue their studies in the technical field.

To Teachers. It will provide information and guidance to teachers to improve their

teaching in the field of cookery education. This will help them better understand the

needs and abilities of their students so that they can be more effective in teaching. To

Administrators. This will lay the foundation for the development of programs and policies

aimed at improving the quality of cookery education in schools. It may bring information

to administrators to support and strengthen this field among Grade 11 Technical-

Vocational Livelihood students.

To Researchers. This will open doors for various research and studies related to

cookery education and technical education. It may inspire other researchers to continue

exploring and researching in this field.

Scope and Limitations of the Study

This study focused on the impact of cookery education among grade 11 students

at San Isidro Senior High School. Specifically, to the students from Technical-

Vocational-Livelihood Strand that served as the main respondents of our study to

answer the questionnaire.

The researcher also chose San Isidro senior high school in La Solidaridad

AFP/PNP Housing, San Isidro, Rodriguez, Rizal as the main setting for our study to get

the right information that corresponds to the aim of the study. This research only applies

to the grade 11 students at San Isidro Senior High School with time span of March to

May 2024.

DEFINITION OF TERMS

1. Cookery Education-This term pertains to the process of teaching and learning

culinary skills, cooking techniques, nutrition knowledge, and food safety practices within

an educational setting. It focuses on providing students with the necessary knowledge

and skills in the field of culinary arts.

2. Cooking skills It refers to the abilities and knowledge required to prepare, cook, and

present food effectively. These skills include a variety of techniques such as chopping,

slicing, dicing, sautéing, baking, grilling, and more. Cooking skills also involve

understanding flavor profiles, ingredient combinations, cooking temperatures, and food

safety practices. Developing cooking skills can help individuals create delicious and

nutritious meals at home or pursue a career in the culinary industry.

3. Food services Food service refers to the industry and practice of preparing, serving,

and delivering food and beverages to customers. This can include restaurants, cafes,

catering services and school cafeterias. The goal of food service is to provide

customers with quality food and drinks in a pleasant dining environment.

4. Impact- The term "impact" in the context of the research study refers to the effect or

influence that cookery education has on Grade 11 Technical-Vocational Livelihood

students. This includes how such education affects students' skills, knowledge,

attitudes, and behaviors related to cooking and food preparation.

5. TVL -"Technical Vocational Livelihood" education. It is a strand in the K-12 curriculum

that focuses on providing students with skills and knowledge related to technical and

vocational fields. TVL education aims to prepare students for careers in various

industries such as automotive, electronics, culinary arts, tourism, agriculture, and other

technical fields.
