Tofu.

MORINGA ICE CREAM
Moringa/Malunggay

Moringa is a plant native to some countries. It contains proteins, vitamins, and minerals, making it useful
to fight malnutrition. Malunggay or moringa is also called a miracle tree because it contains 25x more
iron than spinach, 17x the calcium of milk, 15x more potassium than bananas, and 7x more vitamin c than
oranges. Imagine if this leaf is made into an ice cream that everyone can enjoy most especially children
who do not enjoy eating vegetables/fruits. With moringa, children who do not like eating vegetables/fruits
can be given with their daily requirements of vitamins and minerals.

Why Moringa Ice Cream?

Rich in vitamins and minerals, moringa can benefit children in various ways, including those who are
malnourished and the majority of children hate vegetables. Me and my group mates think that moringa ice
cream can be included in children's diet or if schools have feeding programs they can add this in their
menu since moringa is useful to fight malnutrition. Also, the majority of children, especially here in the
Philippines, do not like eating vegetables. So we think that if we make moringa as a flavor of an ice
cream then children will like it since they like sweets. and moringa can be grinded into a powder that
children wouldn't even notice when they eat the ice cream.

Ingredients:

500 ml of All Purpose Cream


390g of Condensed Milk
1 bundle of Moringa/Malunggay
Egg yolk/Cornstarch (optional)

Materials:
Mixing Bowl
Hand mixer/Electric mixer
Spatula
Ice cream container/Plastic Container
Procedure:

Powdered Moringa
1. Separate the leaves from the stem.
2. Air dry the leaves by leaving it in an open plate or container. (note: An easier and faster
step is to fry or toast the leaves until it becomes brittle.)
3. If the leaves are brittle enough, grind or blend it until it becomes a powder.
4. Set aside for later.

Ice Cream
1. Pour 500 ml of All Purpose Cream in the mixing bowl.
2. Using an electric mixer or a hand mixer, whip the all purpose cream until it becomes
thick or the size of the cream is doubled.
3. When desired thickness is reached, pour 390g of condensed milk in the same mixing
bowl.
4. Whip again until fully combined.
5. If you decide to thicken the mixture, you can add cornstarch or egg yolk in here.Then mix
again.
6. Put desired amount of moringa in the mixed cream and fold it until fully combined
7. In a tub or a plastic container, pour all the ice cream mixture.
8. Set aside in a freezer and wait for 8 hours or until the mixture freezes.
9. Then enjoy!

Santol and Jackfruit Jam


Introduction:
Santol is known for its tangy and sour taste, Santol provides a unique zing that could add a
distinctive tartness to the spread. With its sweet and tropical flavor, Jackfruit adds a natural
sweetness and depth to the spread, balancing the tanginess of Santol. Combining Santol's tangy
flavor with Jackfruit's sweetness creates a unique flavor that's not commonly found. Exploring
this unconventional combination to offer consumers new and intriguing taste experiences.

Ingredients:
- 2 cups Santol (seeds removed and finely chopped)
- 1 cup ripe Jackfruit (finely chopped)
- 1 cup sugar (adjust to taste)
- 1/2 cup water
- 1 tablespoon lemon juice

Procedure:
1. In a saucepan, combine chopped Santol, Jackfruit, sugar, and water.
2. Cook the mixture over medium heat, stirring frequently until the fruits soften and start to break
down, about 20-25 minutes.
3. Reduce heat to low and continue to cook, mashing the fruits occasionally until the mixture
thickens to a spreadable consistency, about 15-20 minutes.
4. Add lemon juice and stir well. Adjust sugar if needed.
5. Once thickened, remove from heat and let it cool.
6. Transfer the spread into sterilized jars and seal tightly. Store in the refrigerator.

Materials:
1. Knife and cutting board for preparing the fruits.
2. Pan for cooking the fruits.
3. Blender or food processor for blending the fruits.
4. Stirring spoon for mixing and cooking.
5. Sterilized jars for storing the spread.
