Lactose Intolerance/

Irritable Bowel
Syndrome
Lactose Intolerance

The small intestine can not process lactose.

Absence of lactase enzyme

65% of humans have trouble digesting lactose.

Very common in west African, Jewish, Arab,

Greek, and Italian descents.


Irritable Bowel Syndrome

A chronic problem in the large intestine.

Symptoms include abdominal pain, bloating, diarrhea, and constipation.

Can cause physical discomfort and emotional distress, but does not cause

damage to the large intestine.

Depending on type of IBS Diet should be low fat, high soluble fiber, and

small amounts of insoluble fiber.


Baking and Pastry adjustments

All dairy products need to be replaced or substituted for a non dairy

alternative when baking.

Examples:

Parmesan cheese: Nutritional yeast

Ricotta or cottage cheese: Crumbled seasoned tofu


Additives

Adding soluble fiber.


Adding little amounts of insoluble fiber.
Vitamin D
Calcium
