THE QUIMBOLITOS
The quimbolitos is the typical food of the Ecuador and all its provinces.

 Ingredients:
(For 10 units)
 2 cups of corn flour (you can also put 1 corn and one wheat)
 3 eggs
 1 cup of milk
 1 cup of sugar
 ½ cup of butter
 1 small spoonful of baking powder
 10 leaves of achira (in its defect use vegetal paper)
 One tablespoon of raisins
 Vanilla
Preparation

1. The elaboration of the quimbolitos begins;

2. Mix the cornmeal with the milk and the butter with the help of a blender.

3. To this mass we will add the essence of vanilla to enhance its aroma and flavor. Some recipes also

incorporate a bit of orange juice or a soft touch of liquor at this time of preparation.

4. Do not forget to put also the teaspoon of baking powder.


5. Apart, the yolks of the egg whites are separated from the eggs, beaten and added to the base

mass together with the sugar, stirring well the mixture so that it is as fine and homogeneous as

possible.

6. The resulting mass is placed on the clean leaves of achira (or on the vegetable paper) and they

are crowned with two or three raisins in each quimbolito as an ornament.

7. The quimbolito is steamed, lasts approximately 30 minutes, depending on the size of the

candy.

 The quimbolito, for its fine sweetness is accompanied with black coffee or milk, chocolate and
aromatic water.
