Coconut Macaroons
Yield: 118, #30 scoop cookies
Directions
Ingredients Weight Measure
1. POUR water and food coloring into mixer bowl.
Water, cool (72°) 8 oz 1 cup
2. ADD almond extract and sweetened condensed milk.
Food Coloring ½- 1 teaspoon
3. ADD mix. Mix using paddle attachment on medium speed
Almond Extract 1 Tablespoon for 2 minutes.
4. FOLD in coconut. Mix on low speed an additional 2
Sweetened Condensed Milk 28 oz 2 cans minutes.
5. DEPOSIT using a #30 scoop into greased or paper lined full

White layer:

Pink Ribbon • 5 lb box White Cake Mix


• 1 lb butter
• 2 tablespoons water
Checkerboard Cookies Red Layer:
• 5 lb box White Cake Mix
• 1 lb butter
• 2 tablespoons red food coloring
• 3 tablespoons Pink Ribbon Mix*
Divide each color dough in half (3 lb each)
Place each 3 lb dough into a 1 gallon plastic
zipper bag. (12 x 12 inches)
Seal plastic zipper bag 3/4 of the way to allow air
to escape. 
Press dough into bags flat with hands. Roll even
with a rolling pin. (Hint: bags can be placed in a
cooler or freezer to firm up for better handling.)
Cut plastic to remove doughs from bags. Stack
the sheets of dough on top of each other,
alternating colors.
Cut into (4) 2 inch sections of the stacked cookie
dough.
Slice each section into (4) 1/4 inch strips.
Assemble 4 strips of the dough, alternating each
strip to make a checkerboard appearance.
Press each log firmly with the palm of your hand
to adhere the layers.
Slice 1/4 inch slices off log to form checkerboard
*Pink Ribbon Spice Blend cookies.
3/4 cup Cinnamon Place cookies 6 x 8 onto a greased or parchment-
2 Tbsp Allspice lined full sheet pan and bake.
2 tbsp Nutmeg
Bake
1 ½ tbsp Cardamom
Convection Oven*            300°F            7-9 minutes
1 tbsp Cloves Standard Oven                 350°F            8-10 minutes

Pink Ribbon Coffee Cakes
• Cran-Blueberry Mini Cake: spread tubeset of each
muffin batter evenly in a well sprayed ½ sheet pan.
Marble top of cranberry with bakable raspberry filling.
After baking and cooling, spread blueberry cake with
Gold Medal RTS Icing then place cranberry layer on top.
Sprinkle with coarse sanding sugar to finish.
• Raspberry Lemon Poppy Seed: spread 1 tubeset of
muffin batter evenly in a well sprayed ½ sheet pan.
Cranberry Muffin
Batter (8070) Marble with raspberry bakable filling. After baking and
Blueberry Muffin cooling, dust with powdered sugar.
Batter (8026) • Cherry Lemon Poppy Seed: spread 1 tubeset of muffin
batter evenly in a well sprayed ½ sheet pan. Stir in about
Cran-Blueberry Mini Cake 2 cups of cherry pie filling. After baking and cooling,

(aka Very Berry Crunch)
Directions
Ingredients Measure 1. Line a full sheet pan with parchment paper. Lightly spray
parchment paper with pan release and set aside.
Rice Chex 8 cups 2. Combine Rice Chex, almonds, coconut and cranberries in a
large mixing bowl and set aside.
Sliced Almonds ½ cup 3. Pour sweetened condensed milk in a small mixing bowl.
Add strawberry gelatin powder and stir until well mixed.
Coconut 1 cup 4. Drizzle sweetened condensed milk mixture over Rice Chex
mixture. Fold in using rubber spatula until Rice Chex mixture
Dried Cranberries 1 cup is evenly coated.
5. Spread mixture evenly across sheet pan. Mixture should

6. Bake in a 300° convection oven for 8 to 12 minutes or
