TOMATO

PASTE
Tomato paste is a thick paste made by
cooking tomatoes for several hours to reduce the water
content, straining out the seeds and skins, and cooking
the liquid again to reduce the base to a thick, rich
concentrate.
• Tomato paste is added to dishes to impart an intense flavour,
particularly the natural umami flavour found in tomatoes.

• Examples of dishes in which tomato paste may be commonly


used include pasta sauces, soups, and braised meat.

• The paste is typically added early in the cooking process and


sautéed to achieve caramelization.

NUTRIENTS

• A 1-tbsp. serving of tomato paste contains just 13 calories and no fat,


meaning it is not likely to contribute to weight gain.

• It also provides 244 international units of vitamin A, which is


important to eye sight health, reproduction and fetal development.

in tomatoes more bioavailable.

• Antioxidants are compounds that scavenge free radicals in the body


associated with disease and aging.

• A study published in the "Journal of Agriculture and Food Chemistry"


in May 2002 found that the manufacturing process of heating
tomatoes elevated tomato's total antioxidant activity, specifically one
called lycopene.

• High intakes of tomato products containing lycopene correlate with


decreased risk of prostate cancer.

• Consuming tomato paste may help protect you against flushing that
occurs as a result of exposure to ultraviolet light.

• The "Journal of Nutrition" published a study in May 2001 showing that


40 g of tomato paste consumed with 10 g of olive oil over 10 weeks
resulted in reduced erythema, or sunburn, by 40 percent.

• The researchers attribute the lycopene in the paste as being the


cause of this positive result.

• In a January 2011 issue of the "British Journal of Dermatology," a


study found that consuming 55 g of tomato paste over the course of
12 weeks provided protection against damage done to the skin due to
sun exposure.
HOW TO MAKE
TOMATO PASTE
•▢1.5 tbsp extra virgin olive oil

MAKING A
TOMATO PASTE
• Rinse the tomatoes well, remove the stems,
and cut into chunks.

• Fill a blender jar with the tomato chunks and


blend until the tomatoes have all reduced into a
sauce
• Place a stainless steel strainer over a large pot on the
stove (or over your slow cooker pot), and pour the
tomato sauce into the strainer.
• Use a stainless steel spoon or a spatula to press the
tomato sauce through the strainer into the pot below.
• Heat the sauce over low heat until simmering, stirring
every once in a while and checking on the
consistency.
• As the water evaporates away, the sauce will
continue to thicken. As is starts to get thicker, turn the
heat down lower and check on the tomato paste
more often because it gets more likely to burn as it
gets thicker and has less water.
• Add a dash of olive oil to the tomato paste as it
reduces on the stove.
• Once achieved the desired consistency, the tomato
paste is ready to be used in recipes, or ready to be
stored.
HOW LONG WILL IT LAST?

• As long as you keep it well-covered with olive oil and


ensure that you only use a very clean spoon to
remove it from the jar, it will keep in the fridge for

 3 to 4 weeks.
