ABSTRACT
Megono is one of the traditional culinary foods
originating from Pekalongan City which has the
potential to meet the needs of modern society.
This task aims to develop the potential of
Megono traditional culinary food into innovative
packaged Megono food products, analyze the
type of packaging that is suitable for Megono
food, and analyze the appropriate heating
method for Megono food. For the process of
heating the Megono food itself, that is by
steaming it half-baked first before the canning
process is carried out

East Java Island, in Pekalongan City.

ready-to-eat and ready-to-eat food.

• For this reason, the idea of ​making


megono into packaged food, which
is practical and durable, but also
healthy, needs to be carried out

• Onion, garlic, chilies,
coriander, white pepper,
candlenut, shrimp paste,
and galangal
TECHNOLOGY
• Megono food can be innovated into
canned food. Food canning is a
method of preserving packaged food
and then sterilizing it.

• The sterilization process is carried out


at a temperature of 121.1⁰C, for 10
minutes, to destroy microorganisms.

• Commercial sterilizers are mostly


used for food in cans, plastics, or
bottles. Megono canned food can last
± 6 months.

• The device used for in-container


sterilization is called a Steam

CONCLUSIO
N
Megono is one of the traditional culinary foods
of the archipelago from Pekalongan. Megono is
made from young jackfruit which contains a
fairly good mineral composition, especially
calcium and phosphorus, carbohydrates and
vitamin C. However, megono is a perishable
food. Megono cannot last more than six hours.
For this reason, Megono food is innovated into
canned food, which in the process uses a
sterilization method with the aim of extending
the shelf life of the Megono food. The
sterilization process was carried out at a
temperature of 121.1⁰C, for 10 minutes to
destroy microorganisms. The sterilization
method used is commercial sterilization.
Megono canned food can last ± 6 months.
