Lesson 2: Types of catering establishments
1. Restaurant:
• Restaurant serves the customers with prepared
food and beverages to order and to be
consumed on the premises.

• Restaurants can be a feature of a larger


complex, such as a hotel, to maximize their
revenue.

2. Transport catering
• Providing food and beverages to passengers,
before, during and after a journey on trains,
airplanes, ships and busses.

• It can be used by the general public, who are


in the vicinity of a transport catering unit.

The major forms of transport catering are :

 Airline catering

Providing food and beverages to airline


passengers on board the aircraft.

 Railway catering

Providing food and beverages to railway


passengers, before, during and after a
journey on trains.

 Ship catering

Catering to cargo crew and passenger-ship


passengers.

 Surface catering

Catering to passengers traveling by surface


transportations such as buses and private
vehicles.

3. Outdoor Catering
• Providing food and beverages away from
home base and suppliers.
• The type of food and set up depends on the
price agreed up on.
• It includes catering for weddings, parties and
conventions.

4. Retail store catering

• Retail stores provide food & beverages to their


customers as a part of their retailing concept.

5. Club catering

• Providing food & beverages to a restricted


member clientele (golf clubs)
• The service and food in these clubs tends to be
of a good standard and economically priced.
 

6. Welfare catering
• Providing food & beverages to people to
fulfill a social obligation, it includes catering
in hospitals, schools and colleges.

7. Industrial catering
• Providing food and beverages to people at
work in industries and factories.
• It is based on the assumption that better fed
employees are happy and more productive.
 
8. Leisure catering

• Providing food and beverages to people


engaged in rest and recreation activities.

Relationship between catering industry and all other industries

We buy food by paying money that we earn working at an


establishment of an industry. This money is shared between the
employer and the employee. They both will use the money to take
care of the three important objectives, which are: food, clothing and
residence.

Raw food needs to be transformed into palatable tasty food
fit for consumption through general cooking at home or
commercial cooking or CATERING. Catering industry is
the only industry that provides food at a price to all other
industries.
