Digestion of starch

Starch → maltose → glucose


► by salivary amylase in the mouth Both converts it to
► by pancreatic amylase in the duodenum MALTOSE

(Amylase works best in a neutral or slightly alkaline pH)

► Maltose is broken down to glucose by enzyme maltase; present in


epithelial cells of the villi.
Digestion of proteins
• protein→ peptide→amino acid
• There are many proteases (or proteinases) which break down
proteins.
1) Pepsin is secreted in the stomach.(works in acidic pH)
2) Trypsin is secreted by the pancreas in an inactive form. (works in
alkaline pH). Activated in duodenum
3) Peptidase by small intestine
Digestion of lipids:
• Lipids are digested to fatty acids and glycerol by lipase( works in
slightly alkaline pH)
• Pancreas produces lipase
