TO BUILD
1. AMERICANO (After Dinner Drink)
Ingredients:
• 1 jigger Sweet Vermouth
• 1 jig Campari Bitter
• Soda Water (optional)
Procedure:
Build all the ingredients over ice filled old fashioned
glass and top with soda water (optional).
Garnish: Twist of lemon (or slice of orange) in the
drink.

Ingredients:
•1 jig Vodka
•½ jig Amaretto
Procedure: Build all the ingredients into
an ice-filled old fashioned glass.

•½ jig Amaretto

4. BLACK RUSSIAN (After Dinner Drink)
Ingredients:
• 1 jig Vodka
• ½ jig Coffee liqueur
or (Kahlua)
Procedure:
• Build all the ingredients into an ice filled
old fashioned glass.
Garnish: Maraschino Cherry

5. WHITE RUSSIAN (After Dinner Drink)


Ingredients:
• 1 jig Vodka
• ½ jig Coffee liqueur (Kahlua)
• ½ jig Milk (Fresh or Evaporated)
Procedure:
• Build all the ingredients into an ice filled
old fashioned glass. Slightly stir.

6. RUSTY NAIL (After Dinner Drink)


Ingredients:
•1 jig Scotch Whisky
•½ jig Drambuie 
Procedure: Build all ingredients into an
ice-filled old fashioned glass.
Garnish: twist of lemon

7. NEGRONI (All day Cocktail)
Ingredients:
•1 jig Gin
•½ jig Sweet Vermouth
•½ jig Campari bitters
•Soda Water (optional)
Procedure: Build all the ingredients into an old
fashioned glass with ice. Splash with soda water
(optional). Garnish with sliced of orange into the
drink.

8. BLOODY MARY (Long Drinks)


Ingredients:
• 1 jig Vodka
• Worcestershire sauce
• Tabasco sauce (hot sauce)
• Salt and pepper to taste
• 4 jig Tomato juice or fill-up

Procedure:
•Build all the ingredients and stir in
highball glass.
Garnish: Celery stalk or Lime wedge

9. TEQUILA SUNRISE (Long Drinks)
Ingredients:
•1 jig Tequila
•3 jig Orange juice or fill-up
•¼ jig grenadine
TEQUILA SUNRISE
Procedure:
•Build the tequila and orange juice into
an ice filled highball glass, stir, then
add the grenadine, and do not re-stir.
Garnish: slice of orange and a cherry on
the rim.

10. LONG ISLAND ICED TEA (Long Drinks)


Ingredients:
• ½ jig Gin
• ½ jig Vodka
• ½ jig Tequila
• ½ jig White rum
• 1 bar spoon Lemon juice
• 2 jig Cola drink
LONG ISLAND ICED TEA

Procedure: Build all the ingredients into


an ice filled highball glass and stir
thoroughly.
Garnish: round slice of lemon on the
rim.

11. CUBA LIBRE (Long Drinks)
Ingredients:
•1 jig Rum
•½ jig Lemon juice
•Cola
Procedure: Pour all the ingredients into a
highball glass with ice and fill with cola and stir
thoroughly. Garnish with round sliced/wedge
of lime or lemon.

11. HARVEY WALLBANGER (Long Drinks)
Ingredients:
•1 jig Vodka
•1/3 jig Galliano
•Orange juice
Procedure: Build vodka into a highball glass
with ice then fill with orange juice. Float the
Galliano on top. Garnish with sliced of orange
and red cherry on the rim.

12. TOM COLLINS (Long Drinks)
Ingredients:
•1 jig Gin
•½ jig Calamansi (lemon) juice
•½ jig simple syrup
•Soda water
TOM COLLINS
Procedure: Build all the ingredients into
a Collins glass (tall glass) with ice. Fill
with soda water.
Garnish: sliced of orange and red cherry
on the rim.

12. GIN FIZZ (Long Drinks)
Ingredients:
•1 jig Gin
•½ jig Calamansi (lemon) juice
•½ jig simple syrup
•Soda water
GIN FIZZ
Procedure:
• Pour the first 3 ingredients into a
shaker with ice, shake well and strain
into a highball glass. Fill up with cold
soda water.
Garnish: sliced of lime or lemon

13. DAIQUIRI (All Day Cocktail)
Ingredients:
•1 jig White Rum
•½ jig lemon or lime juice
•½ jig simple syrup
Procedure: shake all the ingredients and
strain into a pre-chilled cocktail glass
Garnish: ½ sliced of lime/lemon

14. BRANDY ALEXANDER (After dinner
drinks)
Ingredients:
•1 jig Brandy
•1 jig Crème de Cacao
•1 jig Cream or Milk
BRANDY ALEXANDER
Procedure:
•Shake well and strain into pre-chilled
cocktail glass.
Garnish: Sprinkle with grated nutmeg on
top (optional)

15. MARGARITA (All Day Cocktail)
Ingredients:
•1 jig Tequila
•½ jig Triple Sec
•½ jig Lemon/lime juice
MARGARITA
Procedure:
•Pour all the ingredients into a shaker with
ice, then shake well and strain into a salt-
frosted rim margarita glass.
Garnish: sliced lemon on the rim.
NOTE: For Frozen Margarita, blend all the
ingredients with crushed ice.
For Mango or Strawberry Margarita, add the
fruits then blend.

16. WHISKY SOUR


Ingredients:
•1 jig Bourbon Whiskey
•½ jig Lemon (calamansi) juice
•½ simple syrup
WHISKY SOUR
Procedure: Pour all the ingredients into a
cocktail shaker with ice. Shake well and
strain into a sour glass.
Garnish with a sliced orange and red
cherry in the drink.

17. GRASSHOPPER
Ingredients:
•1 jig Crème de Menthe Green
•¼ jig Crème de Cacao
•½ jig Cream (fresh or evaporated milk)
Procedure: Pour all the ingredients into a cocktail
shaker with ice. Shake well and strain into a
cocktail glass.
Garnish: Red cherry on the rim.

18. COSMOPOLITAN (Pre-dinner Drink)
Ingredients:
•1 jig Vodka
•1 jig Cranberry juice
•½ jig Triple Sec
•½ jig Fresh Lime Juice
COSMOPOLITAN
Procedure: Pour all the ingredients into a
cocktail shaker with ice. Shake well and
double strain into a cocktail glass.
Garnish: Lime wedge/Lime round sliced.

Ingredients:
•1 jig Gin
•½ jig Sweet Vermouth
•½ jig Dry Vermouth
•½ jig Orange juice
BRONX
Procedure: Pour all the ingredients into
a shaker with ice. Shake briskly and
strain into a cocktail glass with ice.
Garnish with sliced orange on the rim.

Ingredients:
• 1 jig Gin
• ¼ jig lemon (calamansi)
juice
• ¼ jig simple syrup
• 4 dashes grenadine
• Egg white
PINK LADY
Procedure:
• Pour all the ingredients into a shaker
with ice, shake well and strain into a
pre-chilled cocktail glass.
• Garnish: Red cherry on the rim

21. GOLDEN CADILLAC (After Dinner Drinks)
Ingredients:
• ¾ jig Galliano
• ¾ Crème de Cacao white
• ¾ jig Crèam or Milk
Procedure:
• Pour all the ingredients into a shaker with
ice, shake well and strain into a pre-chilled
cocktail glass

Ingredients:
•1 jig Scotch Whisky
•½ jig Sweet Vermouth
•Dash of Angostura Bitters
Procedure: Pour ingredients into a mixing glass with
ice. Stir and strain into a pre-chilled cocktail glass.
Garnish: red cherry in the drink.

23. MANHATTAN
Ingredients:
•1 jig Bourbon Whiskey
•½ jig Sweet Vermouth
•Dash of Angostura Bitters
Procedure: Pour the ingredients into a mixing
glass with ice. Stir and strain into cocktail
glass. Garnish with red cherry in the drink.
MANHATTAN
• For Dry Manhattan, use dry vermouth
instead of sweet vermouth, other
ingredients are the same. Garnish is
lemon zest in the drink.
• For Perfect Manhattan, use both the
dry vermouth & sweet vermouth, other
ingredients are the same. Garnish is
red cherry on the rim of the glass.

24. DRY MARTINI

Ingredients:
•1 jig Gin
•½ Bar spoon or dash of Dry Vermouth
Procedure:
• Pour all the ingredients into a mixing glass with ice.
Stir and strain into a pre-chilled cocktail glass.
Garnish with green olives in the drink. Twist of lemon
peel (optional)

Vodka Martini
• Substitute vodka from gin. Same
procedure and garnish as dry martini
Sweet Martini
• Same as dry martini but substitute
sweet vermouth for dry vermouth and
a cherry for zest of lemon or an olive.

Perfect Martini
Ingredients:
•1 jig gin
•¼ jig Dry Vermouth
•¼ jig Sweet Vermouth
Procedure: Stir in a mixing glass with ice and
strain into a pre-chilled cocktail glass.
Garnish: red cherry and lemon zest

25. GIBSON
Ingredients:
•1 jig Gin
•½ bar spoon or a dash of Dry Vermouth
Procedure: Pour all ingredients into a
mixing glass with ice. Stir and strain into
a pre-chilled cocktail glass. Garnish with
cocktail onion in the drink.

26. GIMLET (All day Cocktail)


Ingredients:
•1 jig Gin
•½ jig Lime juice
Procedure: Pour all ingredients into an ice-
filled old fashioned glass and stir
Garnish: slice of lime in the drink
GIMLET
Note:
• If straight-up, stir and strain into a
pre-chilled cocktail glass.
• If vodka gimlet, use vodka instead of
gin, same procedure.
To Muddle

27. MOJITO
Ingredients:
•1 jig white Rum
•2 barspoon white sugar granules
•Chilled soda water
•4 Sliced of lemon wedge
•8 leaves fresh mint
MOJITO

Procedure: Crush mint leaves,


lemon/lime wedge & sugar granules
with a muddler in a highball glass. Fill
half of the glass with ice. Pour in rum
and top with chilled soda water. Stir
well
Garnish: mint leaves.

28. CAIPIRINHA (Brazilian Cocktail)


Ingredients:
•1 jig Cachaça Brazilian Rum
•4 sliced of fresh lime wedge
•2 barspoon white sugar granules
CAIPIRINHA

•Procedure: Place the lime wedge and


sugar into an old fashioned glass and
muddled or mash the two ingredients
together using a muddler. Fill the glass
with crushed ice/ice cubes and pour
the cachaça rum.

29. FROZEN MANGO DAIQUIRI


Ingredients:
•1 jig White rum
•½ jig simple syrup
•2/3 lemon or lime juice
•Half fresh ripe mango
FROZEN MANGO DAIQUIRI

Procedure: blend with crushed ice and


pour unstrained into a poco glass or
goblet
Garnish: Sliced ripe mango on the rim
•Note: Appropriate liqueur for other
frozen fruit daiquiris
• Strawberry, Peach, Melon, Banana
daiquiri, and others.

30. PIÑACOLADA
Ingredients:
•1 jig White rum
•½ jig Coconut cream
•2 jig Pineapple juice
•4 sliced pineapple fruit
PIÑACOLADA

Procedure:
• Blend all the ingredients with crushed
ice. Pour unstrained into a large poco
glass or water goblet.
• Garnish: Wedge of pineapple,
pineapple leaves and cherry on the
rim. Serve with straws.

30. VIRGIN COLADA


Ingredients:
•½ jig Coconut cream
•2 jig Pineapple juice
•4 sliced pineapple fruit

Procedure:
• Blend all the ingredients with crushed
ice. Pour unstrained into a large poco
glass or water goblet.
• Garnish: Wedge of pineapple,
pineapple leaves and cherry on the
rim. Serve with straws.

31. CHI CHI
Ingredients:
•1 jig Vodka
•½ jig Coconut cream
•2 jig Pineapple juice
•4 sliced pineapple fruit
CHI CHI

Procedure:
• Blend all the ingredients with crushed
ice. Pour unstrained into a large poco
glass or water goblet.
• Garnish: Wedge of pineapple,
pineapple leaves and cherry on the
rim. Serve with straws.
