Chapter – 1 Alcoholic Beverages

Definition of Alcohol:-
Alcohol is a liquid obtained by the fermentation of any sugar containing liquid. Ethyl Alcohol is the principal alcohol found
in all alcoholic beverages. An alcoholic beverage is defined as any potable liquid having a minimum of 0.5 % of Ethyl alcohol
by volume.

• Benefits of alcohol: -
When drunk in moderation, alcohol can be good for you. It creates heat I human body & is a source nutrients &n energy. It
enhances the flavor & aid to digestion. It accentuates sensory perception, sharpens memory & gives some protection to the
heart & blood vessel by raising the level of good cholesterol. It also depresses center of anxiety, reliving tension & stress.

• Abuses of alcohol: -
Long term heavy drinking can lead to serious illness, including liver cirrhosis & deterioration of nervous system. Heavy
drinking hampers the speed & quality of performance & can lead to danger to themselves & others, especially when driving
or operating machinery. In case of addicted people, you find them extremely unpleasant & unreliable. Sometimes they will
be unfit for work & becomes an embarrassment & a general burden to their families & friends.

• FREMENTED BEVERAGES:- In this type, raw materials used are mostly fruits containing high
amounts of naturally occurring sugar, which can easily be converted by the action of yeast to
alcohol & carbon dioxide.

• Brewed: - It is a process similar to fermentation. But since the base material is a


carbohydrate, it has to be broken down to simpler sugars & yeast has to be added tom it
before the fermentation can occur.
