INGREDIENTS QTY
Smoked salmon slices 20 oz
Orange zest 1 tbsp
Lemon zest 1 tbsp
Spring mix Few leaves
Baby dill Few sprigs
French baguette roll 1 each
Mayonnaise 1 oz

PROCEDURE
1. Cut French baguette rolls into slices slantingly and arrange on the tray to be toasted.
2. Apply mayonnaise to the toasted bread slices.
3. Place spring mix leaves on the bread.
4. Cut a piece of sliced salmon into two and place two pieces on a piece of bread.
5. Sprinkle some orange and lemon zest.
6. Garnish with a sprig of baby dill.
7. Serve cold.

INGREDIENTS QTY
Brown bread slices 25 slices
Unsalted butter ½ lb
Cucumber 1 lb
Seasoning to taste

PROCEDURE
1. Slice brown bread slices into half horizontally using a gravity slicer.
2. Whip soft butter to make it fluffy and light.
3. Apply a thick generous layer on the bread slices.
4. Wash and peel cucumber. Slice them in a slicer machine horizontally lengthwise.
5. Pat dry the cucumber slices and arrange them on the bread slices.
6. Sprinkle salt and crushed roasted black pepper.
7. Close the sandwiches with another layer of bread with butter.
8. Cut the sandwiches into triangles (1 into 4 pcs).
9. Serve cold.

Spring Mix Lettuce 6 oz
Chicken Breast 8 no
Thyme 1 sprig
Vegetable oil 3 oz
Celery Sticks Chopped 1 oz
Yellow Onion Chopped 1 oz
Chives Chopped ½ bunch
Mayonnaise 3 oz
Green and Red Grapes 16 Pcs
Dijon Mustard ½ tspn
Salt & Crushed Pepper To Taste

Method
1. Marinate Chicken Breast with chopped thyme, salt, crushed pepper and vegetable oil. Grill the
Chicken Breast for 6 mins on a hot grill 220*C (3 mins on both sides).
2. Cut each brown bread slice into 3 finger-sized pieces.
3. Toast the cut bread on both sides lightly.
4. Spread a swab of mayonnaise and arrange the spring mix on the toasted bread.
5. Cut grilled chicken breast slantwise thinly and mix with finely chopped chives, onion and celery.
6. Make a thick sauce whisking together, mayonnaise, Dijon mustard, salt and cracked pepper.
7. Lightly toss the chicken mixture to the prepared sauce and adjust seasoning.
8. Take an ounce of the chicken salad mixture and arrange on top of the bread piece with spring mix.
9. Garnish the chicken salad with red and green grapes wedges and spears of chives.
