Chocolate or cocoa is a food made from roasted and ground cacao seed
kernels that is available as a liquid, solid, or paste, either on its own or
as a flavoring agent in other foods
Overview: The chocolate production process consists of fermentation, drying, roasting, grinding of cocoa
beans, mixing of all ingredients (cocoa mass, sugar, cocoa butter, emulsifiers, aroma, and milk components if
needed), conching, and tempering.
•Raw Material Reception: This is where cocoa beans and other ingredients are
received, inspected, and stored

•Cleaning and Roasting: The beans are cleaned to remove debris, and then roasted to
develop flavor. Roasting times and temperatures can vary depending on the desired
chocolate type.
Grinding: Cocoa nibs are ground into a paste called cocoa liquor (also
known as cocoa mass or cocoa paste). Additional cocoa butter can be
extracted during this step.
• Refining: The cocoa liquor is further refined to achieve a smooth
texture. Sugar and other ingredients, like milk powder for milk
chocolate, may be added during this stage.
Mixing and Conching: Ingredients like sugar, milk solids, and flavorings
are mixed with the chocolate liquor. The mixture is then conched, a
process that kneads and smooths the chocolate to enhance flavor and
texture.
• Tempering: The chocolate is carefully cooled and agitated to ensure
that the cocoa butter crystallizes correctly. Proper tempering results
in a shiny appearance and a crisp snap when the chocolate is broken.
Molding: The tempered chocolate is
poured into molds to create the
desired shapes. This step can involve
multiple layers for filled chocolates.
Cooling: The molds are cooled to
solidify the chocolate.
• Demolding: Once the chocolate has
solidified, it is removed from the
molds.
• Packaging: The chocolate is packaged in various forms, such as bars,
boxes, or bags. Labels and branding are applied at this stage

• •Quality Control: Throughout the process, quality control checks are
performed to ensure the chocolate meets the desired standards.

•Storage: Finished chocolate products are stored in a controlled
environment to maintain their quality and freshness.
