In catering, it’s not just about the food, it’s about the
experience.

On October 03,2023 BSHM 3F conducted a catering


service at Fatima Farm Resort located at San Enrique,
San Lorenzo, Guimaras as part of our laboratory in
the subject Banquet and Catering under the
supervision of Instr. Cristian Jee Osano. We’ve
catered around 200 PAX, but before the day of the
event there’s a lot of procedures we had to engage
with and these are the following:
Finding and Ensuring a Client
As part of our laboratory wherein we need to conduct a
catering service to an any event, we need first to find a
potential client. For us to advertise our business, we used the
social media platform to market our product and services, but
aside from the social media platform we spent time to roam
around and introduce our proposal regarding with our service.
As we continue on advertising our business, Fatima Farm
Resort booked us for their upcoming event wherein they’ll be
having a guests that will conduct a training or seminar and
they are composed of around 200 people.
Planning and Budgeting
As we identify our client, we immediately proceed to our
next step which is the planning and budgeting. We made a
checklist of everything that we will need before, during
and after the event. After listing everything, we estimate
the expected budget for the event. The catering manager
assigned each and everyone their designated duties and
responsibilities for the upcoming event and planned the
things that is needed to do and developed the menu with
the lead of the head chef Mr.Yanson together with the
other chefs in charged.
Preparing
After the planning, we prepared all of the
documents needed to have our permit to conduct
the said activity. We also submit excuse letters to
the instructors whose class will be affected by our
catering service.
Marketing
The purchasers bought everything that are in the list to
be used for the event. They are responsible to make sure
that the products that they are going to purchase are
appropriate and in good quality.
Preparations During the
Event
On October 03, 2023, we arrived at Fatima Farm Resort at
exactly 10:00 am eventhough our service will be on lunch
time because we need to have a brief discussion regarding
with the venue and our responsibilities we need to portray.
Since we arrived early, we manage to help the staffs of the
resort to serve the guests during their snacks in the
morning.
During the Event
Usher and Usherettes
Usher and usherettes welcome and tend to our guests. As an
usher, they are required to provide guests with information
such as program details and the location of the restrooms,
refreshments, and emergency exits.

Usher and usherettes should have a pleasant demeanor and


excellent interpersonal skills and they should be able to
easily identify guests' needs and provide exceptional
customer service.
Servers
Server or Waiter, is responsible for serving food and
beverages to guests. They greets the guests, bringing them
the correct drinks and dishes and refilling their beverages as
needed. They use their customer service skills to ensure that
guests have everything they need and in doing so, they
elevate their employer’s image. They also engage with
guests throughout their meal to ensure everything is
satisfactory. They may also be responsible for cleaning tables
after guests leave and providing customer feedback to the
kitchen staff.
