Black Salt

Black salt is very commonly used in Ayurveda Food. Black salt gives cooling effects to the Body, this is the reason Black Salt used in summer season only. Black salt used as a Laxative & Digestive Aid also it helps to relieve intestinal gas. Black salt is good for all the Doshas (Body Type), it is salty and pungent in taste, light and oily in nature, decreases Pitta and Vata.

Nigella Seeds
Kalonji is also used in Ayurveda Food, is very useful for the respiratory system, also works as Anti bacterial and Anti inflammatory. Very bitter and slightly pungent in nature. Commonly used for making pickles, breads and used as a one of pickling spice. As per the Ayurveda, the Kalonji is still used to help relieve vomiting and diarrhea, as well as flatulent colic, and to help counteract the griping action of purgatives (e.g. certain laxatives, fruits such as apricots when over consumed).
Kalonji oil is beneficial for various diseases like asthma, cough, flu, allergy, heart attack, constipation, skin and others.

Recipes
(Black salt used in Amm ka panna, Shikanji, bel ka sharbat, phalse ka sharbat, thandai and watermelon sharbat}

Amm Ka Panna
Raw Mango --- 300 gm Cumin Seed slightly Broiled----- 2 tea spoon Black salt --------- 2 tea spoon Black pepper ------ tea spoon Sugar ------- 100 gm Fresh mint leaves ------------- 5 gm Lemon juice ----------- 3 ml Method --Boil the raw mangoes with little salt, Cool and puree the pulp with chilled water. Add all the remaining ingredients. Serve chilled.

Aloo Panchforan with Kalonji nan


(Also used in making Kalonji murgh, Kalonji gosht, Tawa Kalonji fish, and making roti, parantha, papad and nan} Baby Potatoes ---------- 50 gm Red chili whole -------- 2 gm Five pickling spices --------- 5 gm Fennel seeds Mustard seeds Fenugreek seeds Kalonji Cumin seed Turmeric powder ----- 1 gm Chilli powder --------- 1 gm Coriander powder --- 1 gm Fresh coriander ------- 5 gm Corn oil ------- 5 Ml Ginger / garlic ------ 5 gm

Method Boil the baby potatoes with turmeric powder. Heat oil, add all the pickling spices and ginger garlic. Add turmeric powder, coriander powder and chili powder. Slightly tossed with fresh coriander leaves and salt.

Served with baby Kalonji Nan.
