Restriction Enzyme
A restriction enzyme is an enzyme that cuts DNA at specific recognition nucleotide sequences. To cut the DNA, a restriction enzyme makes two incisions, once through each sugar-phosphate backbone (i.e. each strand) of the DNA double helix.
