SPROUTED BEAN SALAD

Beans: 2c sprouted bean trio (truRoots brand from Costco or substitute lentils) 3c water ea medium onion, peeled but not cored 2 stks celery, cut in half to fit in pot 2 ea garlic cloves, smashed 1 ea bay leaf salt Dressing: c sherry or red wine vinegar 1 ea garlic clove, minced 2t whole grain mustard c olive oil salt & pepper, to taste Garnishes: 4 oz chevre, optional Combine beans, water, aromatics, and salt. Bring to a boil, reduce heat, and simmer until cooked through. Drain any excess liquid. Combine dressing ingredients and toss with beans. Can be served warm or chilled; do not garnish with chevre until ready to serve.
