WINTER SQUASH SOUP

1T 2# 1 ea 1 ea 3 ea 2 ea 1 ea 6c roasted peanut oil squash, peeled, seeded, chopped onion, diced lemongrass, tender center only, minced ginger slices jalepeno, seeded, diced, half reserved for garnish garlic clove, crushed curry stock (vegetable stock seasoned with curry) salt & pepper, to taste

Garnishes: 1c coconut milk 2t mint, chopped 2t basil, chopped 2t cilantro, chopped lime wedges Puree and garnish to serve. For stew fold in potatoes, bell peppers, cauliflower, and garbanzo beans.
