SPELT BREAD

1 loaf 1 pkg 1t 2T c 1c 2T 1t 3c 1T 2 loaves 2 pkgs 2t 5T c 2c c 2t 7c 2T active dry yeast spelt flour juice concentrate or honey water soy milk, unsweetened, plain vegetable oil or melted butter salt whole grain spelt flour flavorful oil of choice

Place yeast and1 t of spelt flour (2 t for 2 loaves) in a bowl. Warm sweetener and water to 120, stir in yeast mixture and set aside to bloom. Warm soy milk, oil, and salt to 120, add 2 cups of flour (4 cups for 2 loaves) and stir with a wooden spoon to 20 count. Add yeast mixture and stir to 20 count. Add remaining flour 1 cup at a time. Knead 10 minutes. Proof, shape, proof, bake at 350. Once cool, brush with flavorful oil.
