Carrot almond Cake

Materials:
4 eggs (separate the yolk and the white) 1 1/2 cup corn oil or vegetable oil 120g sugar 100g brown sugar 1 1/2 cup carrot (shredded) 250g flour, 1 tea spoon cinnamon, 1 1/2 tea spoon baking soda (sieved) 100g almond (crushed) 1 tea spoon salt topping: 120g butter, 250g cream cheese, 120g icing sugar (optional)

Method:
1. Beat the yolk, add in the corn oil, sugar (both type) and the carrot. Mix together and add in the almond. 2. Add in the sieved materials. Mix together using wooden spoon. Add in the salt. 3. In another bowl beat thoroughly the egg white until soft peak form 4. Mix with the other batter. 5. Bake at 170C for 50-60 minutes Topping: Mix together all the ingredients and beat together using electric mixer until soft and fluffy.
