What you are probably looking for is the weld size... and weight of the weld.... for v grooves... idk about u grooves but their probably similar you have to divide up the cross section of the weld into 4 sections

2 right triangles at the bevel angles 1 rectangle down the throat and then a obtuse triangle on the top for the cap

calculate the cross sectional area for each of these sections and add it up... that is the amount of deposited weld metal.... not the deposition rate... area 1 is the rectangle...
