Coconut Ice-Cream

Ingredients 1 1/2 ltrs (2 5/ !ints" milk 1 fresh coconut with thick meat 1 can (#$$ %rams" condensed milk 5 to & tables!oons su%ar 1 teas!oon vanilla essence 2 tables!oons fresh %rated coconut 1 tables!oon su%ar for to!!in% Method 'rate the fresh coconut. (ivide into 2 e)ual !ortions. *o one half of the %rated coconut, add # tables!oons of milk and blend in a mi+er. -rom the other half of the %rated coconut, s)uee.e out the coconut milk. /train throu%h a thin cloth. 0eat , tables!oons of su%ar in a vessel on a slow flame until it melts. Add the remainin% milk and boil until the su%ar dissolves. Add the remainin% su%ar and boil for 5 minutes. 1i+ the blended coconut (ste! 2", coconut milk (ste! ,", sweetened milk (ste! #", condensed milk and vanilla essence. 2heck the sweetness and ad3ust to your likin% usin% su%ar or lemon 3uice. 5re!are the ice-cream in an ice-cream churner. How to serve 0eat 2 tables!oons of fresh %rated coconut in the oven until sli%htly !ink in colour. /!rinkle on the ice-cream before servin%. Alternatively, mi+ 2 tables!oons of fresh %rated coconut and 1 tables!oon of su%ar and cook untill the su%ar caramalises sli%htly. /erve hot on to! of the ice-cream.
