How are Claret, Meritage, and Bordeaux wines different from each other?
Claret (pronounced clair-ette), is a common British term for a
classic French red Bordeaux blend. Centuries ago, the term was
spelled clairet and applied to a red Bordeaux more lightly colored
than todays darker, fuller style.

Smoked Paprika Tomato Sauce with Fennel & Sarvecchio Meatballs
Along the winery studded Highway 46 West corridor,
SummerWood Winery & Inn stands out as one of the areas most
renowned estates. The Fukae familyfrom Osaka, Japanhas
owned the winery since 2001. It was at that time that they renamed
the property SummerWood in honor of their son Natsuki, which
means Summerwood in Japanese. The local team is highly
experienced within the wine and hospitality industry, which is plain
to see and taste when visiting SummerWood and enjoying the wines!
While SummerWood does not have a restaurant onsite, the team is
very focused on food & wine pairing. The estate is host to numerous
public and wine club events throughout the year. Wine club
members are invited to seasonal Perfect Pairing occasions with the
ability to use two complimentary tickets to one of these events per
year. On November 15th, guests will warm up with Chef Kelly as
she showcases fall flavors paired with SummerWood wines. Chef
Kelly and the team have generously shared a recipe for Smoked
Paprika Tomato Sauce with Fennel & Sarvecchio Meatballs. Many of
the ingredients can be found at the local Templeton Farmers Market
on Saturday mornings and the recipe is quite easy to follow. The
finished product is warm and satisfyingperfect for the transition to
cooler and darker evenings! The dish is designed to be enjoyed with
the 2010 SummerWood GSM blend; this Grenache, Syrah,
Mourvedre blend was sourced from Pasos most reputable vineyards,
including Denner & Alta Colina. The wine showcases a robust blend
of ripe red and black fruits, interlaced with fennel and violets. The
vanilla and toasted oak notes are balanced by firm tannins and
structured acidity. SummerWood only produced 175 cases of this
bottling; it can be found for a limited time in the tasting room and on
the website.
The SummerWood Winery & Inn recently went through a major
renovation and upgrade. The finished product is truly beautiful and
thoughtful, and is set amongst a young estate vineyard. Guests of the
inn are treated to a fabulous gourmet breakfast each morning and
delicious hors doeuvres in the evenings. Executive Chef Kelly
Wangard certainly keeps plenty busy onsite. In exciting news offsite,
Chef Kelly was selected as a contestant on the Food Network
television show Cutthroat Kitchen! Her production dates were back
in May, but the show aired on October 26th! Stay tuned to hear
more about Chef Kellys experience.

OPOLO VINEYARDS
A Favorite of Visitors and Locals Alike

Keeping up with the Joneses has never been an issue for California neighbors Rick
Quinn and David Nichols. In 1996, the two discovered a shared passion for wines and
winemaking which led to the creation of Opolo Vineyards, a winery known for its
outstanding, consumer friendly wines and excellent customer service.
Comprised of 80 hilly acres on the west side of Paso Robles, and over 200 acres in the
gently sloping east side hills, Opolo Vineyards has been producing fruit since the late 1990s;
the tasting room opened in 2001. Originally, Quinn and Nichols had no plans to start their
own winery, although according to Nichols, We both love to make wine and have made
our own backyard wine for some time. Twenty years later, Opolo Vineyards produces
nearly 30,000 cases a year and boasts over 30 wines made from seventeen different varietals.
Although Quinn jokingly calls it a hobby that got out of control, Opolo has become a
staple in the Paso Robles wine industry and a favorite of visitors and locals alike.
Quinn and Nichols spirit of partnership continues in the winemaking process at Opolo
as well. In addition to the owners, the Winemaker, Vineyard Manager, Lab Manager, Cellar
Master and other employees all work together to create wines that appeal to a variety of
palates, although Quinn and Nichols have the final vote. With this truly communal
approach, all aspects of winemaking are kept in mind while creating the final product. What
emerges from this process are Opolos signature wines, which Quinn describes as big, bold
wines, approachable and consumer friendly. One such wine is Opolos Mountain
Zinfandel, which boasts aromas of pomegranate, fig, and cranberry on the nose. Raspberry
jam dominates the mid-palate nuanced by savory butterscotch overtones. Flavors of vanilla,
white and cayenne peppers, and cinnamon spice make for a lively finish.
Customer service and a welcoming tasting room atmosphere are integral to the Opolo
experience. On any given day, visitors to the tasting room are greeted by the friendly staff
and treated to a fun, personalized wine experience. On the weekends, tasters enjoy freshly
made pizzas, flatbread and Opolos famous Cevapcici (a traditional Yugoslavian sausage),
paired with a choice of wines.
One of Opolos most popular celebrations is the annual Harvest Festival. During the
festival, the scenic hilltop comes alive with the sounds of Serbian folk music and the smells
of roasted lamb, chicken and pork. Daring visitors are also invited to participate in the grape
stomping and folk dancing.
Rather than turning their hobby into a competition, Quinn and Nichols chose to forge
a partnership that would result in a truly unique wine experience. Visitors to Opolo
Vineyards leave with a sense of community, friendship, and of course, fantastic wine.

Many family businesses never last as long as the Riboli family and
within the California wine industry, there are even fewer generational
wineries. What surprises most people is that the Riboli family and
their San Antonio Winery have been actively making wine for 97
years. In 1917 the Riboli family started their winery in Los Angeles,
near downtowns historic Olvera Street, which was once a hub of
grape growing and winemaking.
The Riboli story isnt limited to Southern California though; it is
the Central Coast where the family has put down roots, literally. San
Antonio opened a tasting room in Paso Robles in 2008 and yet the
Ribolis have been using Central Coast fruit for decades. Once
vineyards were ripped up in the Los Angeles area to make way for
more buildings, the Ribolis wisely understood the potential that the
Central Coast offered; they moved to secure vineyards as far back as
1988 with their three vineyards in Monterey. They recently acquired
land and planted two Paso Robles vineyards in the El Pomar area.
These sites, named Stefano and Maddalena for the family patriarch
and matriarch, were ideal due to the combination of soils, climate
and high quality water. The family also owns an estate vineyard in the
Rutherford region of Napa Valley, which produces the Riboli Family
Cabernet Sauvignon. In addition to their own properties, they have
long-term contracts with various grape growers, which secures the
consistency of their fruit. That consistency and focus on crafting the
best wines possible resulted in a slew of awards at the 2014 Central
Coast Wine Competition, including pulling in Best of Show Red for
their Cabernet Sauvignon, Best Zinfandel and Best Malbec.
Winning awards and making wine always appears to be a fun
venturea kind of hobby for many peoplebut for the Ribolis it is a
continuum of history. Were hard working people and this is what

our family does for a living, says fourth generation family member
and winemaker Anthony Riboli. Our tasting rooms offer a wide
array of choices from award winning, full-bodied reds to sweet
dessert wines. We cater to many different tastes. They offer two
tasting options at the Paso Robles tasting room: the Daily Tasting and
the Artisans Series, which consists of award winning and highly
allocated wines. Regardless of which flight you choose, San Antonios
portfolio spans traditional ones like Chardonnay, Cabernet Sauvignon
and Pinot Noir, to lesser known varietals such as Petite Sirah, Malbec,
Petit Verdot, Viognier and a very popular line of Moscatos for those
with a preference for sweet wines.
In addition, at the Paso Robles tasting room they offer pizza and
other foods made by a local chef on the weekends so you can do
your wine tasting, then get a glass or a bottle to go with a bite of food
and hang out on the patio. They also have a large gift selection, and
the wood-toned interior features custom metal wine racks and photos
of the historic original winery. They are dog friendly as well and its
easy access right off Highway 46. If you happen to be in downtown

Robert Hall Winery is proof that hard work, determination and attention to
detail really can make dreams come true. The winery was the vision of Robert L.
Hall, a man who after a successful career dabbling in a number of ventures, moved
to Paso Robles to plant vineyards and produce a nationally distributed line of foodfriendly, age-worthy wines.
The winery sources fruit from 300 acres of estate vines in addition to purchasing
fruit from other quality growers spread across the Paso Robles AVA. Using 100%
Paso Robles grapes, winemaker Don Brady delivers "The Essence of Paso Robles"
in each one of the varietals and blends produced. He has worked with the same
vineyard blocks for thirteen years and has developed a consistent house style. The
wines are offered at an extremely good value for premium wine -- this was one of
Robert's missions since he wanted consumers to be able to enjoy the wine every
day with friends and family.
The hospitality center and tasting room were also built with a vision of friends
and family enjoying wine together. The many picnic areas offer places to sit and
relax while enjoying the spectacular views of the surrounding, oak-studded
vineyards. Ideally suited for events, the winery hosts several annually including:
two New Year's Eve Parties (one more formal with multi-course dinner and live
music in the Meritage room and the other in the cavern with a DJ for those who
like to dance the night away), Valentine's Day celebration, winemaker's dinners,
Port & Cigar events and wine club parties. The facilities are also available for
private events and on several weekends you may catch a glimpse of a bride
celebrating her special day.
The tasting room offers two options for tasting. The first includes a taste of five
wines selected from the house offering. These wines are distributed throughout the
country and are typically $20 or less. Cabernet Sauvignon is the winery's most
widely produced wine; however, the tasting list offers a number of dry whites, dry
reds and dessert wines include several Rhne varietals and blends. The second

Located on the scenic Pleasant Valley Wine Trail in San Miguel, the majestic Villa SanJuliette buildings lure wine country visitors into the estate for a tasting and a glimpse of what
the Hollywood producer owners, Nigel Lythgoe and Ken Warwick, have created.
The short walk from the parking area, along the sidewalk surrounded with the manicured
landscape, leads to a spectacular fountain set in front of nature's backdrop of rolling, oakstudded vineyards and distant hills. A comfortable lounge area beckons guests to sit and relax
while taking in the expansive views.
Stepping inside the tasting room, guests are greeted with European-inspired elegance and
friendly tasting room staff. The tasting menu features the Villa San-Juliette brand made from
their best estate fruit. With just three to five feet of calcareous soil overlaying rock and gravel,
the San Miguel vineyards deliver rich fruit, deep in color with flavor that is true to each
varietal.
The estate vineyards are planted with eleven different varietals, with the majority of the
acreage dedicated to Cabernet Sauvignon, Merlot and Sauvignon Blanc. Along with these
wines, the winery offers Petite Sirah, Zinfandel and "Chorum" blends under the house label.
A reserve offering includes a number of additional varietals including Albario, Pinot Gris,
Cabernet Franc, Malbec, Petit Verdot, Alicante Bouschete, Grenache and a couple of dry Ros
wines.
Villa San-Juliette's winemaker, Matt Ortman, joined the team with an extensive
background in winemaking. He believes in the region and feels the estate vineyards are
capable of creating exceptional wines. Matt's goal is to create wines of richness, depth and
character which will stand up to the quality of the landscape and tasting room experience. He
prides himself in delivering wines that are true to their varietal while showcasing the terrior.
For those who enjoy a challenge, the tasting room offers a "So you think you can taste?"
blind pouring of four wines. The tasting fee of $15 will be waived if all four of the wines are
correctly identified. This is a fun way to test your senses and also focus your efforts on the
wine. The tasting room also offers a seasonal menu of decadent small bites, crafted to pair
with the estate and reserve wines. These small bites are offered daily from 11:00 a.m. to 4:00
p.m. and may be enjoyed at the tasting bar, or taken to the lounge area to enjoy with a glass
or bottle of wine. The menu changes frequently, based on the availability of seasonal
ingredients and changes in the wine. For groups larger than twelve, the tasting room requests
advance reservations.
It isn't surprising, with the 168-acre playground, that the winery hosts a number of events
to indulge their guests. Several months of the year, the winery often offers live music with a
Sunday Music Series as a great way to relax on a lazy Sunday afternoon. Club members are
occasionally invited to garden parties with croquet and on special occasions, the winery offers
unique experiences such as hayrides through the vineyard, helicopter tours and educational
seminars.
You are invited to share the good life with your own private events at Villa San-Juliette.
Picnic lunches, guided tours and custom experiences may be arranged for couples or larger
groups. The beauty of this property is also ideally suited to weddings and corporate events.

Castoros annual Beaverstock event is always a delight to look forward to; this year was no
exception. September 13th-14th marked a dedication to music and community. This family
and education-forward event was inspired by the children that boldly shape the Central
Coast community. Castoro brought together a phenomenal music lineup and showcased
local food vendors, craft breweries, artists and yoga professionals. The event benefited the
Templeton Education Foundation, a non-profit dedicated to giving back to the Templeton
School district. The Castoro team can hardly wait to see what great community involvement
Beaverstock 2015 will bring.

When you ask winemaker Kevin Willenborg about the techniques he uses at Vina
Robles Winery, the word balance is mentioned, again and again. He said that growing
grapes that can be turned into exceptional wines requires an attention to detail, a focus
on observation, and an emphasis on balance.
Willenborg said, Wine should express the terroir of the area and we are looking to
fully capture that by balancing the vine to the wine. He said that this process begins
with clonal selection and rootstock, and involves having the right soils, conditions, and
viticultural impacts. He said, A winemaker has to be out in the vineyard to shepherd
and balance the vine so as to fully express the fruit for a given terroirs potential.
As everyone knows, harvest is a crucial time for winemakers. Willenborg makes
picking decisions based on taste and texture. He also looks for physiological
development of the skins and seeds, as well as flavor. Skins and seed development are
especially important for the color, textures and mouthfeel found in red wines since
they are fermented with both skins and seeds of the grape, he said.
Willenborg said he uses a combination of modern and old world techniques in the
production of Vina Robles wines. He uses pump overs and punch downs, barrel aging
in French oak barrels, and traditional cellar racking as part of his nod to tradition.
However, he also employs color and tannin analysis techniques, modern filtration
methods, and blends wines using nontraditional varietals. One of these is the WHITE4
blend made with Viognier, Verdelho, Vermentino and Sauvignon Blanc. He said, It is
not traditional, but it expresses the bold expressive fruit and terroir of Paso.
Vina Robles is known for its red wines, especially its Cabernet. However, the winery
also produces a variety of other noteworthy wines, including a limited edition Petit
Verdot.
Here is a list of some of the wines currently available:
Suendero - This is a Bordeaux blend aptly named the dream path. It is described
as rich, bold and expressive.
Petite Sirah This wine is distinctive. While many Petite Sirahs can be overly
aggressive and dry, Vina Robles produces a wine with rich dark fruit flavors and a
creamy finish.
Petit Verdot This wine has very rich dark fruit tones and creamy tannins. It has
been bottled in a small quantity and will be offered in the hospitality center starting
December 5.

The petition for the 11 new AVAs was filed in the spring of 2007
by the specially formed Paso Robles AVA Committee. A group of 59
vintners and growers, with the assistance of experts in a variety of
fields, methodically crafted the submission with science as its
standard. The petition proved to be the single largest AVA proposal
ever filed with the United States Alcohol and Tobacco Tax and Trade
Bureau (TTB) due to the scale and scientific data assembled to
substantiate the request.
The TTB published the final ruling Thursday, October 9 on
www.ttb.com. The official map of the 11 Viticultural Areas, as well as
a comparison grid detailing climate, rainfall, topography, etc., is
