PASSATELLI

Ingredients:
120 g grated parmesan cheese
salt
eggs 3
nutmeg
bread crumbs
lemon peel of 1 o 2 lemons
bouillon 1 l
pepper
Directions:
Shell eggs in a mixing bowl and beat them with a fork, then add grated parmesan cheese,
bread crumbs, nutmeg, salt, a lemon peel and pepper. Amalgamate all ingredients till getting a
solid, uniform and elastic mixture. Let it stand for 5 minutes, then squeeze all mixture with
the potato masher in dribs and drabs. Cut passatelli after reaching 4 cm length and put them
in a rag without superimpose. Boil bouillon and cook passatelli into it, then extract them when
they reach surface. Serve with parmesan cheese aside.
