PICKLES 2

Lemon-Dill Pickles
Wash cucumbers and dry. Place the following in the bottom of each quart
jar.
1 bay leaf 4 cloves garlic
1 grape leaf 1 head dill
Pack whole or vertically sliced cucumbers in jar.
Put in top of jar:
1 ½ Tbsp. lemon juice 1 Tbsp. salt
1 head of dill 1 grape leaf
Fill jar with boiling water and seal. Process in boiling water bath 15 minutes.

Bread and Butter Pickles (Angela Ford)


2 Tbsp. celery seed 2 tsp. turmeric
2 c. brown sugar or fructose 4 qts. large cucumbers, sliced
2 c. lemon juice 8 onions, sliced
2 c. water 2 red peppers, chopped
¼ c. pickling salt 2 green peppers, chopped
Layer peppers, onions, and cucumbers with salt and set in a cool place for
three hours, then drain. Combine remaining ingredients and bring to a boil.
Fill hot canning jars quickly. Let seal.
