Fish Slices with Vegetables

Ingredients (serves 4) Nutrient Analysis (per serving)


200g sliced fresh fish (deboned)
50g corn kernels
30g tomato - peeled, deseeded and cubed
Energy 158 kcal
15g chinese mushrooms, sliced
15g red capsicum Total Fat 11 g
20g green capsicum
1 tsp ginger paste Saturated Fat 1g
2 egg whites Cholesterol 20 mg
2 dsp corn oil
1 1/2 tsp Chinese cooking wine Dietary Fibre 1g
2 dsp chicken soup
Sodium 316 mg

Seasonings
1/2 tsp salt
1/5 tsp sugar
1/5 tsp pepper
1/2 tsp cornflour

Method

1. Coat fish slices in egg white & cornflour.


2. Heat 1 dsp oil, add in fish. Stir-fry till cooked. Put on plate.
3. Add remaining oil and fry the ginger paste till fragrant.
4. Add in all vegetables, stir-fry till cooked.
5. Add in fish and seasoning mixture.
6. Cook through and serve.
