Salmon in Orange Sauce

Ingredients:

3 filleted salmon
1 tsp lemon juice
pepper, salt
1 oranges
150 g / 5 oz creme fraiche
1 tsp crab paste
2 tsp green peppercorns
1 tbsp orange juice
1 tsp orange peel
400 g / 13.5 oz potatoes
1 tbsp fresh dill
20 g / 2/3 oz butter, unsalted

Serves 3 - 552 cal per serving


Prep-time: 30 min. - Total-time: 60 min.

Thaw the salmon and season with lemon juice, pepper and salt. Rinse the untreated
orange with hot water and dry thoroughly. Peel off part of the orange very thinly and cut the peel
in fine stripes. Peel the rest of the orange and fillet. Layer the orange fillets in a baking dish and
top with the salmon. Dissolve crab paste in 1 tbsp hot water and make a spicy sauce together
with creme fraiche, pepper, peppercorns, orange zest and orange juice. Pour the sauce over the
salmon and bake for 20 min at 390 F in the pre-heated oven. Serve with potatoes boiled in their
jacket. Peel the potatoes before serving and swirl them in melted butter garnished with fresh dill.
Put orange slices on the salmon in orange sauce before serving.
