Potato Rolls

What do we need:
2 1/2 cups plain flour
1/2 cup mashed potatoes
1/2 cup warm water
1 egg
2 tbsp butter
2 tbsp sugar
2 tsp instant dry yeast
1/2 tsp salt

Glazing:
1 egg yolk
1 tbsp water

How do we do it:
Dissolve yeast in 1/4 cup of the warm water.

Combine mashed potatoes, egg, butter, salt, sugar and the yeast mixture. Add flour alternately with the
remaining 1/4 cup of warm water. Mix until well combined. Turn the dough onto a floured board and
knead. Cover and let it rise for 1 hour in a warm place.

Divide dough into preferred number of equal sized pieces and form them into rolls. Place on a baking
sheet and let rise in a warm place for 30 minutes or doubled in size. Brush the dough with the egg yolk
and water mixture. Bake at 220 C for 15 to 20 minutes.

Serve potato rolls warm or cold with butter and/or


jam.
