Chapter 1

THE PROBLEM AND ITS SETTING

Introduction

A school canteen must be a free from dirt and safe environment. Performing safe

personal sanitation for the staff members, being aware about storing of food, keeping

food at the right condition, maintaining neatness are the steps the staff must take to

always ensure a safe consumption of food (Food Safety, 2016) According to the study of

Titcombe (2010), the school canteen is a great place that helps promote an enjoyment of

eating healthy. The food purchased makes a significant contribution to the students who

use canteen regularly, in th eirtotal food intake and nutrition. Therefore, ensuring the best

food possibly makes sense to take information presented to them and enhance their

ability to learn in class Reinforcing skills, knowledge and behaviors about lifestyle of

healthy eating that are taught in the classroom are the important role that the canteen

plays within the broader school environment. The vital role of the canteen is to create a

school culture healthy eating and promote healthy foods. The provided food at school has

a considerable influence on the children’s development of long-term eating habits,

attitudes towards the food and their preferred food (Halton,2015 school canteen must be

Statement of the Problem

The study will seek to find out Specifically, the study sought to answer the following

questions:

1. What is the status of the school canteen practices as perceived by the teachers

and canteen personnel in terms of:

a. quality and quantity of food served

b. kinds of service rendered to the customers

c. prices of the commodities

d. utilization of canteen facilities

e. transparency of profit

f. efficiency of coop staff; and

2. Is there a significant difference between the perception of the canteen personnel

and teacher respondents on the status of school canteen practices?

3. What are the comments and suggestions of the respondents to improve the school

canteen practices?

4. What enhancement can be proposed by the researcher to the handbook as output

of the study?

Hypothesis

This study is guided by the following hypothesis: There is no significant relationship

between the domains of canteen service quality (tangibility, assurance, reliability,

responsiveness, and empathy) and student satisfaction at the IMSHS.

1. Scope and Limitations of the Study

This study focused on the perception of the Senior High School learners regarding

the services rendered by the school canteen. This study is only limited to the extent of the

school year, 2017-2018. The study was conducted in Ismael Mathay Sr. High School with

the Senior high school students as the respondents of the study. One possible limitation

of this study is the honesty of the respondents in answering the questionnaire. Hence, the

researchers personally conducted the distribution of the questionnaire to the student for

objectivity and

Significance of the Study

The study will benefit the following:

The finding and result of the present study would primarily benefit the pupils

and might as well as the teachers and school administrators. In the same way, it was the

aim of this study to evaluate the difficulties encountered by the leaners and the solution

of the said problem with the kind of service that the school canteen rendered. As a further

matter, this research may provide opportunities and enhance the services that the school

canteen offered. This study will provide some understanding and information on how they

will manage the canteen for the leaners and teachers.

To the school administrator: This study may be a great help in improving the services

canteen and other school food services.

To the students: This study will help the learners to have their equality at forming lines,

a better canteen services and do the 5S+1 easily.

To the teachers: This study may serve as an information for them to actively take part in

maintaining the good quality of the services offered by the canteen. This can help as it

would present them as good role models for the learners to follow.

Definition of Terms

The following are terms which are operationally used in the study:

Canteen- a restaurant provided by an organization such as a military camp, college,

factory, or company for its soldiers, students, staff, etc.

Food- any nutritious substance that people or animals eat or drink, or that plants absorb,

in order to maintain life and growth.

Nutrition- the process of providing or obtaining the food necessary for health and growth.

Service- a system supplying a public need such as transport, communications, or utilities

such as electricity and water.

Student- a person who is studying at a school or college

Chapter 2

This chapter reviews the related literature and studies on problems closely

related to the present study.

Related Literature and study

DOH Calabarzon's Dr. Marilou Espiritu said canteens play "a

major role in promoting children's healthy eating habits." "Like they

say, you're what you eat and we're better off with prevention,

encouraging children early on to make healthy food and drink

choices like their way of life, so they're not going to be predisposed

to non-communicable diseases," she said.

According to the Department of Education (2013), they are greatly devoted

to support student’s health and welfare through its curriculum in schools and range

initiatives that offer opportunities for physically fit individuals that like eating healthy

food. DepEd wants canteens in public schools to be healthy both in the food they

offer and in their finances. The Department handed over the operation of canteens

in public schools to teacher’s cooperative in 1996 to give them additional source

of income.

According to Janairo, the menu planning workshop is also in support to the

DepEd's Department Order No.13 of 2017, which provides for Policy and

Guidelines on Healthy Food and Beverage Choices in Schools and in DepEd

Offices for the promotion and development of healthy eating habits among the

school children, youth and DepEd employees by making available healthy,

nutritious, and affordable menu choices, and for setting food standards. He also

stated that school teachers play an important role in shaping a child’s mind in

building their knowledge, skills and influencing their behavior, especially in eating

nutritious foods and promotion of healthy diet. He added that the role of the

school canteen is to help in the promotion of healthy eating habits because most

of the total nutritional daily intake of a student are acquired from foods sold in

school canteens

As stated in the DepEd Order No. 13 series of 2017 or The Policy and

Guidelines

on Healthy Food and Beverage choices in schools and in DepEd offices for the

promotion and Development of healthy-eating habits among the youth and

DepEd employees by making available healthy, nutritious and affordable menu

choices and for setting food standards. It emphasizes that only nutrient-rich foods

such as root crops, noodles, corns and rice products in native preparations, fruits

and vegetables in season and fortified food products labeled rich in protein,

energy, vitamins and minerals shall be sold in school canteens. Beverage shall

include milk, shakes and juices prepared from fruit and vegetables in season.

Adunna (2013) addressed the need for an enhancement program to raise

not only sales but also the quality of its operations along the lines of canteen

management. In addition to providing healthy and affordable food, canteen should

be based on good management practices and financially self-sustaining.

According to Drummond (2011), she claimed that school canteens are an

important part of the school atmosphere and an ideal place for promoting healthy

eating. However, her research shows that many school’s food facilities face

questions about healthy food supplies. When a person doesn't get enough food or

doesn't get the right kind of food, malnutrition is just around the corner, according

to the World Food Program.

The World Health Organization's (WHO)' Commission report on reducing

childhood obesity' (2016) recommends setting standards for meal delivery to

comply with dietary guidelines, removing unhealthy foods from the school

environment and setting up processes to protect public health from conflicts of

interest. School-based programs encouraging the consumption of healthy food

and non-alcoholic drinks are frequently reported to be among the most cost-

effective diet-related solutions to NCD prevention.

According to Caffoodmsueats (n.d.), An unhealthy Cafeteria food is a

problem for countless reasons, eating unhealthy foods at school at an early age

can lead to bad eating habits for the rest of their lives. It stated that this leads to

Obesity in children, and continuing to adults but it’s not just a weight issue that

needs to be worried about, several dangers are associated with eating fatty foods

that do not have nutritional value. They added that it leads to Obesity and the

consequences for that besides psychological repercussions can be heart attack,

stroke, high blood pressure, diabetes, knee and joint problems, various types of

cancer and death and this problem begin with young children eating poor foods in

cafeterias.

According to Belda, K. (2016), The body needs vitamins A and C to

strengthen immune system to fight off any foreign bodies and regenerate. It’s made

up of 50-75 per cent water and it constantly needs to be hydrated so it can flush

out all the toxins from our body. Consuming high sugar foods and processed foods

not only deprives us of these necessities, it also makes our insulin levels spike

causing us instantly turn all the sugars we have consumed to fat.

The foods offered in school canteens have a vital role in ensuring children’s

consumption of nutritionally balanced foods because students may purchase food

and drinks in around their schools. According to the analysis carried out at Colegio

de San Juan de Letran in Calamba by Floricon Encabo and Michelle Ventanilla

(2014), few concessionaires provided fruit, vegetables, and fish. Few school

children are eating fruit, vegetables and fish. Only average calcium intake matched

the RENI in terms of nutrient intake. In the canteen, a small range of lunch meals

resulted in minimal consumption of essential nutrients.

According to Borrey, E. (2016), The 21st century canteens faces many

difficulties, the first is the increasing discussion on food choices and as in most

fields of life. moreover, the war on junk food is now being waged in many canteens

She also added that A healthy body goes hand in hand with a healthy mind is

definitely true and the schools can play a part in offering healthy food choices for

its customer advantage. She also stated that an ideal canteen is one that caters to

the broadest possible clientele taking into account if their patrons identify as

vegetarian, vegan, kosher, halal, coeliac lactose intolerant, have a nut allergy, or

have no such dietary requirements.

Kardes, Cronley and Cline, (2011). Stated that Canteen is a very important

facility for the students through which a better standard of food and refreshments

can be obtained. Moreover, through these canteens wholesome food and

refreshments can be provided to the students at reasonable prices so as to make

available to them a balanced and hygienic food. This is likely to improve their health

and efficiency but Canteens also serve as places where students can meet

informally and refresh themselves by a relaxing conversation.

According to Kremers S. (2018), the queues are the biggest problem in the

school canteen for students who use the facility, but the biggest overall problem is

that there are simply not enough children using the school canteen. In addition to

these, improving queues can help attract more students to the system. He also

added that this is the last thing people want to do to spend their time away from

school, waiting in overly long queues.

Manahan, J.A(2018) said that while there are conflicting views on the cause

of price hikes, it cannot be ignored that students are also impacted by the trend

even though a vast majority of them do not pay taxes yet. As many of them are not

yet working, they do not appreciate the higher pay for taking-home due to the

reduction in income tax.

According to Mendoza (2009), in any food service organization, sanitation

plays an important role. Mendoza also stated that Standard sanitation practices

are important to be able to achieve better safety for the workers and the consumers

in general, because they are the reason, we set up a food institution. Food security

and sanitation are an integral part of the food sector, according to Mark.

Howe (2014). While it is important to be able to deliver food efficiently and

profitably, we cannot underestimate the importance of food safety and

sanitation, he added.

METHODOLOGY OF RESEARCH

This chapter presents the research method used, population and sample size,

sampling technique, description of respondents, instrumentation, the data gathering

procedure, and the statistical treatment of data used in the study

Research Method Used

The descriptive research design was used in this study because in this

study we will use a questionnaire checklist to gather information. Descriptive research is

a purposive process of data gathering enabling the researches to determine the prevailing

condition of the canteen.

Population and Sample Size

There was a total of almost 70 grade 12 maritime students in Ismael Mathay.

Weighted arithmetic mean is a kind of average. Instead of each data point

contributing equally to the final mean, some data points contribute more “weight” than

others. If all the weights are equal, then weighted mean equals the arithmetic mean (the

regular “average” you’re used to.)

With the help of the weighted arithmetic mean as the formula to analyze the

quantitative data, the researchers will be able to identify what factors are visible when it

comes to Issues regarding canteen management, based on the perception of the

selected students in the school.

Description of respondents

This study's Respondents are Ismael Mathay seniors chosen grade 12 students.

the Respondents selected are the one who knows how to respond to the specific study.

the respondents answered the questionnaire provided to them by researchers who

provide the data researchers want.

Instrumentation

In partial fulfillment of our subject which is the research project we are conducting

this survey to gather information about our research study entitled "Issues Regarding

Canteen Management". All the information that were going to obtained will be treatment

with utmost care and participants with this survey will remain confidential to protect the

rights of the respondents of this research study.

Data Gathering Procedures

The researchers of this distributed questionnaires randomly to the selected

respondents. The survey questionnaires were evaluated by the students. After the

respondents answered the questionnaires, the collected data were tabulated and

validated using statistical tools or measurement for analysis and interpretation of data.

Statistical Treatment of Data

To answer the questions raised to this study. Since this research used descripted

method to interpret the data that have gathered during the interview and the survey

questionnaire two types of treatment can be done to analyze the given information of the

respondents.

the year of 2017 in Tandang Sora National High school, now he is currently studying at

Ismael Mathay Sr. High school, someday he wants to be a Seafarer. Playing computer

games, mobile games, guitar and Watching movie is his favorite past time.
