SUMMARY

Banana is such a fruit, which is mainstay in every fruit basket around the globe.
In India, bananas are also cherished in their raw form. Green banana or kaccha
kela is part of many savory Indian recipes. It can be steamed, boiled, stir-fried,
batter-fried, deep-fried, mashed and curried, and also be used as a stuffing, in
salads or in dips.
Raw Banana also called as cooking banana or plantains are banana cultivars of
genus Musa. Raw Banana is starchy with relatively neutral flavor and soft
texture when cooked. Raw Banana fruit all year round, making it as all- season
staple food. Raw Banana contains more starch and less sugar, thus they are
usually cooked or processed before being eaten.

Green bananas are full of fiber with are good for people with digestive and
bowel problems. It is especially beneficial for people with irritable bowel
syndrome and constipation. It is loaded with potassium, which acts as a
vasodilator. Potassium helps in regulating blood pressure levels. It is a
powerhouse of nutrients that works effectively for diabetics. It enables slow
release in sugar. Green banana needs to be cooked for better absorption of
nutrients.
Green bananas are an excellent source of fiber. Fibers play an essential role in
ensuring digestive health as well as our heart health. Just like the ripe bananas,
green bananas too are extremely rich in potassium. They can be included in diet
during weight loss as they are full of dietary fibres. Green bananas are a
powerhouse of vitamins and minerals. In addition to potassium, raw bananas are
rich source of vitamin C and vitamin B6. It also facilitates absorption of
essential minerals and nutrients, especially calcium.

Raw bananas are seen as cooling astringent and are used in traditional
Ayurvedic medicine. Ayurveda, the science of self-healing, believes that Raw
bananas can help in the overall health of the body and can regularize the passing
of stool during diarrhea. They are also believed to act as an anti-inflammatory
when cooked with turmeric and cow’s milk, and can help reduce symptoms
associated with ulcers. Raw bananas are used in place of potatoes by those of
the Jain religion of India, who are forbidden to eat root vegetables.
The Proximate analysis of the fruit was carried out and the results obtained
showed some difference with the standard USDA values.
Phenols are wide range of chemical compounds that are considered as
secondary plant metabolites, with different activity and chemical nature. The
bioactivity of phenols may be related to their antioxidant behavior, which is
attributed to their ability to chelate metals and scavenge free radicals.
The Km of enzyme amylase was found to be less than the Km of immobilized
enzyme. This refers that the immobilized enzyme performed better reaction as
compared to free amylase.
Raw banana peels were successfully used as a low cost iron adsorbent. The peel
can be used to adsorb iron from various agricultural waste and sewage
treatment.
Anthocyanin pigments were extracted from banana flower bracts and the same
was utilized to produce litmus paper strips. Whattman filter paper gave better
results than normal filter paper. As there is no use of chemical reagents in the
production of litmus paper, there is no harm to the environment.
The scientific expedition in the Biochemistry of Raw banana peel proved to be
fruitful as various aspects of the raw banana were successfully studied. It was
observed that the raw banana peel extract showed inhibition against Escherichia
coli, Bacillus subtilis and Pseudomonas aeruginosa. However zone of inhibition
was not obtained raw banana peel extract for Staphylococcus aureus..
In spite of numerous important revelations attained in the present research study,
curiosities associated with certain experiments demands a further research.
The present study investigated few research problems in the vast arena of Raw
banana.
The study has provided decent clarifications & satisfactory results but has also raised
various questions. Many different adaptations, tests, and experiments can be
performed in the future to solve the questions that emerged during the prosecution of
the research.
Future studies, therefore, should aim at improving our understanding of biochemistry
of raw banana, both from an observational and a theoretical perspective.
