CARRIER OBJECTIVE:

Responsibilities:
In charge for the smooth operation related to F&B support of the Entire hotel, including
coffee shop, restaurants, Banquets, Bar, IRD and ODCs.
Working closely with Executive chef and the F&B manager responsible for making
recommendations to the Executive Chef & F&B manager regarding succession planning,
Capex planning.
To ensure all financial budgets and goals are met for the upcoming restaurants in the
hotel.
Monthly inventory of china ware, glass ware & silver ware for all outlets including
banquets
To ensure that all food preparation equipment is being used safely and correctly and it is
maintained clean at all times.
Sanitization of the kitchen on daily basis.
Deep cleaning of the kitchen and exhaust hood in the night shift on daily basis.
Silver and brass polishing of the chafing dishes and all the silver ware & brass ware.
Daily maintenance of gas bank and all the gas equipment.
Interaction with F&B Manager and respective teams, to create a yearly Capex plan for
the outlets.
Ensuring all relevant banquet set-ups & live counter ahead of guest’s arrival and in
adherence with hotel standards.
Regular recce of new items that are introduced in market to keep up with the latest
product trends in terms of crockery, chauffeur & equipments.
Maintain all the record pertaining to the cleaning supplies, buffing & electroplating
requirements & maintaining hygiene in the back areas.
Frequently verify if only highest quality products are used in f&b operation.
Prepare weekly roster and administer annual leave planner and file correctly for the
stewarding staff.
To delegate responsibilities to subordinate as required.
Coach & counsel employees in a timely manner and in accordance with company policy.
To recruit & select suitable Stewarding team.
Responsible for identifying strengths & Weaknesses of staff and provide timely feedback
to the individual.
Responsible to maintain, monitor health & safety standards, FSSAI, ISO22000
regulations area adhered.
Certified ISO 22000 internal auditor and provide regular trainings to staff for awareness.
