MARINADES, FLAVOURED BUTTERS & RUBS

Lime and Sweet Chilli Marinade Tomato and Olive Butter


For BBQ seafood eg prawns. Delicious with beef, lamb and tuna.
2 tablespoons sweet chilli sauce GF 100g softened butter
1 tablespoon kecap manis – thick soy sauce 1 tablespoon chopped black olives
¼ cup lime juice 1 tablespoon chopped semidried tomatoes
2 tablespoons crushed garlic 1 tablespoon finely sliced basil leaves.

Fresh Herb Oil Marinade Ginger and Shallot Butter
Great for vegetables and haloumi cheese Delicious with chicken or seafood
½ teaspoon pepper corns crushed 100g softened butter
¾ cup olive oil 6 French shallots, finely chopped
2 teaspoons fresh rosemary leaves 1 tablespoon finely grated ginger.
1 teaspoon fresh thyme leaves
2 teaspoons fresh mint leaves Fry shallots and ginger in butter til fragrant
1 tablespoons finely shredded basil leaves. and add to softened butter.
Garlicky Greek Marinade Caper and Anchovy Butter
Great for lamb, chicken and pork. Delicious with beef or lamb.
1/3 cup olive oil 100g softened butter
1 tablespoon lemon rind 1 tablespoon rinsed capers, chopped
2 teaspoons dried oregano 2 anchovy fillets chopped and drained
4 cloves garlic 1 tablespoon finely chopped chives.

Chilli and Kaffir Lime Marinade Asian Style
Great with chicken and seafood. ½ cup warmed honey
2 cloves garlic 1 tablespoon soya sauce –GF
4 kaffir leaves finely chopped 1 teaspoon Chinese 5 spice
1/3 cup/80ml fish sauce 2 cloves garlic
1 small red chilli Pinch dried chilli flakes
1/3 cup/80ml peanut oil.
Thyme and Dijon Marinade Spanish Style
Great with beef, pork, lamb or chicken. 2 tablespoons brown sugar
¼ cup lemon juice 2 teaspoons garlic salt
¼ cup olive oil 2 teaspoons smokey paprika
1 tablespoon Dijon mustard ½ teaspoon black pepper
1 clove garlic Pinch cayenne pepper
1 teaspoon thyme leaves 2 tablespoons red wine vinegar
½ teaspoon white pepper
Red Wine Marinade Classic Rub
Great with beef or lamb. 2 teaspoons dried oregano
½ cup red wine 1 teaspoon paprika
2 cloves garlic ½ teaspoon ground cinnamon
1 teaspoon roughly chopped rosemary ¼ teaspoon ground fennel
¼ cup olive oil. ¼ teaspoon chilli powder

Delicious with chicken or seafood ¼ cup fresh lemon juice
100g softened butter 2 cloves garlic
½ teaspoon chilli flakes 2 teaspoons ground coriander
2 teaspoons finely grated lemon rind 1 teaspoon ground cumin
2 tablespoons finely chopped coriander. 1 teaspoon turmeric
