ADOBO CROQUETTES

Adobo Recipe
Ingredients

½ kilo Chicken
1 ½ cup Soy Sauce
1 ½ cup Vinegar
1 large onion
4 gloves garlic
1pcs laurel leaf
Oil
Salt
Pepper

Procedure

1. Heat the garlic and onion in oil on medium heat. Add the garlic first and cool until lightly
brown. Then add the chopped onions and cook until it becomes translucent. Be careful not
to burn the garlic and onion. Use a wooden spoon or spatula to keep the ingredients
moving.

2. Add the chicken and stir. You don't have to use a whole chicken. Instead, you can use
parts of the chicken you like the best instead.
3. Add the soy sauce, vinegar, peppercorn, salt, sugar, water, and bay leaves. Stir and mix
everything together.

4. Let the chicken simmer for 20 to 30 minutes. Cover the skillet and let the chicken
simmer until it is tender. After 15 minutes, spoon the sauce over the chicken. Let it simmer
for the rest of the remaining time. If you like your chicken dry, let it simmer for a little
longer.
For the Croquettes

Ingredients

1cup butter
1 1/2 cup APF(all-purpose flour)
1 Liter milk
200 grams chicken flakes (adobo)
Add sauce of adobo (until it taste like adobo)
Onion leeks
Whole pepper
Laurel leaves
White onion

Procedure
1 In a pot boil the freshmilk together with onion leeks white onion pepper and laurel. After
boiling set aside

2 In a pot melt the butter and add the flour slowly until well mix. add the fresh milk slowly.
mix until you get the right thickness
3 add adobo sauce and flakes then mix.

4 Pour the mixture onto a tray and chill in refrigerator for several hours.

5 Cut out rectangular pieces and roll to cylindrical shape.


6 Roll each peace in flour , egg and bread crumbs.
7Chill for an hour and deep fry golden crispy. Serve on the side with the mayo.
