Jackie’s Banana Nut Bread

1 cup sugar
2 cup flour
½ teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder

Mix all these dry ingredients in a large bowl.

Add:
½ cup oil
2 eggs
4 medium OVER-RIPE bananas, mashed (I usually chop them small, directly into the bowl with
everything else)
3 Tablespoons milk
1 teaspoon vanilla

Mix well with mixer.

Stir in:
½ cup nuts, chopped (walnuts or pecans)

Pour into GREASED bread pan and bake at 350 F (180 C) for one hour, or until golden brown
AND a wooden skewer/toothpick comes out clean when poked into the center.

**One recipe makes one regular bread pan, or two small loaf pans (bake 35-40 min.). Can also
pour into muffin tin and bake 12-15 min. or until golden brown.
