Slow Cooker Asian Pork Roast

You might be wondering exactly how we’re going to make Asian pork low-carb and
Atkins-friendly. After all, isn’t a big theme in Asian food sweetness with saltiness and
savory? We’re going to have to make some changes and put our spin on it while keeping
that authentic Asian flavor. That’ll be a running theme you might notice.

3 pounds pork loin roast


1 large onion, thinly sliced
4 cloves minced garlic
1 tablespoon vegetable, peanut, or canola oil
4 bay leaves
3 tablespoons rice vinegar
1 teaspoon ground ginger
¼ cup soy sauce
½ teaspoon salt
½ teaspoon pepper
½ teaspoon Accent seasoning
1 teaspoon ground cloves
2 tablespoons corn starch
¼ cup Splenda or other sweetener (optional)

You might notice that this recipe is very herby, has lots of spices, and might be a little
bit salty. That’s my personal preference, so feel free to change as you see fit. The corn
starch in the recipe is to thicken the sauce, so alter that if you want it thinner or thicker,
but be mindful of the carbohydrates. If you’re not a big fan of the taste of artificial
sweetener, leave it out. You’ll get something a bit more savory and salty. When you’re
picking out your pork roast, I recommend getting one with a lot of fat on it. That’ll do
wonders for the flavor. Remember, meats and fats are almost always CARB-FREE!

Combine garlic, salt, pepper, and Accent in a bowl. Cut your roast in half and rub it
with that mixture. Place the roast in the cooker along with the bay leaves and onions. Put
one half cup of hot water in a bowl and stir in the Splenda, soy sauce, vinegar, ginger,
and cloves. Pour it over the pork. Make sure to cover all sides. Cover with a lid and
cook for 4-5 hours or until desired tenderness is reached. After the meat has finished
cooking, remove it from the slow cooker. Don’t forget to take out the bay leaves, too.
Slowly stir the corn starch into the slow cooker until dissolved. If desired, cook the
sauce on high until desired thickness is reached. Either put the pork back into the slow
cooker, or serve the sauce on top of the pork, sliced.

Slow Cooker Barbecued Pulled Pork

The way this dish out turns mostly relies on whether or not you want to add barbecue
sauce. Barbecue sauce on its own is mostly just sugar, honey, and spices, so it’s not
really something that’s great for Atkins. However, if you want, you can find several
zero-carb barbecue sauces, but they’re made with artificial sweetener in place of the
sugar and honey. If you choose not to add the sauce, the dish is a bit more subtle and
subdued.

4-5 pound pork shoulder or pork butt


2 yellow onions, sliced or diced
5 garlic cloves, minced
1 cup chicken or beef broth
1 tablespoon brown sugar
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon ground cinnamon
Salt and pepper to taste
2 cups zero-carb barbecue sauce (optional)

You might notice the brown sugar in the recipe. Normally, I wouldn’t put sugar into a
low-carb meal, but I think just a small amount of sugar here can go a really long way to
the flavor.

Place all ingredients into slow cooker on low for 8-10 hours. When finished cooking,
remove any bones and cut or shred into small chunks, then return to slow cooker.

Quick and easy, right? For a great serving suggestion, use some fresh lettuce as a wrap
for the pork. Crisp and crunchy meets soft and spicy!

Slow Cooker Boeuf Bourguignon

Also known as Beef Burgundy if you’re not French. The great thing about this recipe is
that we hardly have to change it at all to keep it low-carb and Atkins-friendly.

2 pounds beef for stewing


2 large carrots, thickly sliced
2 cups mushrooms
3 cloves garlic, minced
1 cup beef broth
¼ cup tomato paste
2 teaspoons salt
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon black pepper
½ cup burgundy
3 tablespoons cornstarch

You’re seeing that corn starch again. I’ve found, generally, that corn starch gets you
more bang for your buck, in terms of carbs, for thickening, so I almost always prefer it
to flour. Make sure the burgundy you’re getting for this recipe is a nice dry wine.

Toss beef in a bowl with the cornstarch, coating as much as possible. Place all
ingredients into slow cooker, covering and cooking on low for 8 hours.
You might be used to having beef burgundy with egg noodles or rice, but remember that
those are almost pure starch and are packed with carbs. I find the dish is spectacular
without them.

Slow Cooker Blue Ribbon Chili
Chili is the sort of dish that the slow cooker is made for. They both go together so well.
To boot, chili is a recipe all about meat, which is CARB-FREE!

4 pounds ground beef


2 cans diced tomatoes, 14 oz each
1 can tomato sauce, 15 oz
1 tablespoon chili pepper
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon garlic powder

You might be thinking that four pounds is a lot of beef. And it is! The issue is that filler
in chili will usually be more beans than beef, because it’s cheaper. But beans, of course,
are starchy and carby, so we’re cutting them out and replacing them with more beef. I
hear that snooty chili chefs hate beans in their chili, anyway. If you like your chili more
or less spicy, try tweaking the amount and variety of spices and seasonings in the chili.

Brown the ground beef in a skillet. Place beef and all other ingredients in slow cooker.
Cover and cook 8 hours on low heat.

Do you have a favorite hot sauce? You might want to pick one out, because the best ones
are CARB-FREE! Put some Tabasco or Crystal on your chili for a boost in flavor and a
kick in the spice!

Slow Cooker Bountiful Beef Stew

1 ½ pounds beef for stewing


2 cups beef broth
1 can diced tomatoes, 14 oz
1 onion, diced
5 celery sticks, chopped
4 carrots, chopped
4 teaspoons garlic, minced
3 tablespoons olive oil
1 tablespoon thyme
4 bay leaves
Salt and pepper to taste

Most beef stews have potatoes in them, but we’re cutting that out because, once again,
it’s all starch. We’re putting in more carrots and celery instead.

In a pan, very briefly brown the meat with salt, pepper, and olive oil. We’re just getting
a very quick sear. Pour the mixture into the slow cooker, along with the other
ingredients. Cover and cook on low for 8 hours.

Slow Cooker Breakfast Sausage, Bacon and Eggs

This recipe is more like a casserole than anything. It’s great for putting in the fridge and
heating up later. The best part is that bacon, eggs, and sausage are all CARB-FREE!

12 large, Grade-A eggs


1 cup milk
1 lb bacon
1 lb sausage
1 lb cheddar cheese, grated
½ cup onions, diced
1 bell pepper, diced
Salt and pepper to taste

I’m a big fan of cheddar cheese, which is just as well, because most cheeses are very
low in carbs. A whole pound of cheddar has less than 6 grams of carbohydrates!

Cook both the bacon and the sausage in a pan or skillet. Cut the bacon into pieces, if
desired. Place bacon, onions, pepper, and cheese into crockpot. In a large bowl, beat
the eggs, milk, salt, and pepper together. Pour the mixture into the crockpot. Cover and
cook on low for 10-12 hours.

If you want to get fancy, consider adding onion powder, garlic powder, olive oil, and
more to the dish.

Slow Cooker Cheesy Meatballs

Remember what I said about cheese being low-carb? We’re taking it to the next level
here.

2 lbs ground beef


16 oz mozzarella cheese, shaped into balls
1 can diced tomatoes, 15 oz
1 can tomato paste, 6 oz
1 cup grated parmesan cheese
½ cup fried pork rinds, crushed
1 teaspoon Worcestershire sauce
2 cloves garlic, minced
1 teaspoon ground basil
2 eggs
4 tablespoons olive oil
Salt and pepper to taste

The ground pork rinds here serve as an excellent substitute for bread crumbs that’s
CARB-FREE. The kind of spaghetti sauce you buy in the jar tends to be full of sugar and
carbs, so we’re making our own here.

Mix beef, eggs, pork rinds, ½ cup of parmesan, Worcestershire, garlic, basil, salt, and
pepper in a large bowl. Shape the beef into balls around the mozzarella balls. You can
make these as big as you want, but keep in mind that they can get too big to cook or too
big to stay together. The sweet spot is probably about 2 inches in diameter. Brown the
meatballs briefly with the oil in a skillet. Pour the tomato sauce and paste into the slow
cooker, and place the meatballs carefully in the sauce. You don’t want the sauce
splashing or the meatballs coming apart. Sprinkle the remaining cheese on top of the
mixture. Cover and cook on low for 6 hours.

I love having cheese inside meatballs. It’s a fun time, like having a hamburger stuffed
full of pickles, onions, and cheese.

Slow Cooker Chicken Alfredo

You’ll be making the Alfredo sauce here without the slow cooker, but it takes less than
15 minutes, so you shouldn’t have any trouble with it. Alfredo is great for Atkins
because it’s made from ingredients that are VERY low-carb.
1 stick butter
1 cup heavy cream
2 cups parmesan cheese
1 ½ pounds boneless chicken, cut into 1 inch pieces
5 oz mushrooms
3 cups broccoli, cut into small florets
1 tablespoon olive oil
½ cup red bell pepper

In a saucepan, warm the butter and cream together. Add the parmesan, stirring until
melted. That’s it for the sauce!
In a saucepan, brown the chicken using the olive oil. Place all ingredients in slow
cooker except for the sauce. Add the sauce on top evenly. Cover and cook on low for 6
hours.

I’ve always maintained that a proper Atkins diet is all about enjoying savory foods, and
this dish exemplifies that perfectly.

Slow Cooker Chicken or Veal Picatta

Like many other Italian dishes, this one doesn’t have too much in the way of carbs. The
carbs you’ll find in Italian dishes all come from the pasta or bread, which we’re leaving
out.

3 lbs boneless chicken or veal


1 jar capers, drained
¼ cup corn starch
½ cup chicken broth
¼ cup olive oil
¼ cup dry white wine

Like I said, not much in the way of carbs there, save for the corn starch. We’re making
sure it’s only a little bit of it, though.

Cover the chicken or veal with corn starch, and briefly brown them in a pan with the
olive oil. Place all remaining ingredients into slow cooker, along with the meat. Cover
and cook for 6 hours on low.

Slow Cooker Country Style Ribs

Ribs in the slow cooker work a lot better than you might think. They’re given plenty of
time to cook and tenderize, so by the time they’re finished the meat falls off the bone at
the slightest touch.

6 pounds ribs, cut into sections


2 onions, sliced
4 tablespoons paprika
¼ teaspoon cayenne pepper
1 cup water
Salt and pepper to taste

This recipe tends to be, like many other Atkins dishes, rather subtle and subdued. Once
again, if you want, you can add in a zero-carb barbecue sauce.

Put all ingredients into slow cooker and mix. Cover and cook on low for 8 hours.

Slow Cooker Fiery Buffalo Chicken Wings

A heads-up: this recipe is pretty spicy.

4 pounds chicken wing sections


2 12-oz bottles hot pepper sauce
1 cup butter
3 tablespoons garlic powder
3 tablespoons onion powder
3 tablespoons oregano
3 tablespoons Worcestershire sauce

If you don’t like your wings quite so spicy, you can use a milder hot sauce in this recipe.
Maybe even consider using vinegar instead.

In a saucepan, combine ½ cup butter, 1 bottle hot sauce, onion powder, garlic powder,
oregano and Worcestershire sauce. Cook until butter is melted and ingredients are
combined. Place chicken into slow cooker along with sauce. Cover and cook on low for
4 hours or until desired tenderness. If you want to crisp the wings, place them in the
oven at 350 degrees Fahrenheit on a baking sheet for 30 minutes.

Slow Cooker Herbed Cornish Hens

One of the biggest advantages of the slow cooker is that, due to the long cooking time, it
makes meat tender like nothing else manages to. This chicken just falls off the bone!

2 Cornish game hens


1 cup chicken broth
¼ cup melted butter
¼ cup butter, divided into tablespoons
¼ cup lemon juice
1 teaspoon garlic powder
1 teaspoon thyme
Salt and pepper to taste

If you like a really buttery hen, feel free to add as much butter as you might want. It’s
CARB-FREE! Lemon juice is somewhat low in carbs, so if you want a zestier hen, add
a bit more.

Mix lemon juice, melted butter, salt, pepper, garlic powder, thyme, in a bowl and rub
and pour over hens in the slow cooker. Pour the broth into the slow cooker. Put a
tablespoon of butter in the cavity of the hens, and put the rest of the butter in the broth.
Cover and cook on low for 8 hours.

Another great benefit of Atkins is that you have a wide array of zesty tools at your
disposal, like lemon juice, vinegars, and more.

Slow Cooker Italian Herb Meat Sauce

You know how spaghetti sauces always seem to taste a lot better the day after? That’s
because the sauce has time to settle inside the meat, infusing it with all the flavor. Get
that same flavor by letting it cook in the slow cooker.

1 pound ground beef


1 pound Italian sausage
2 15-oz cans diced tomatoes
1 onion, minced
2 cloves garlic, minced
3 tablespoons olive oil
4 bay leaves
1 tablespoon oregano
1 teaspoon basil
Salt and pepper to taste

If you prefer, you can substitute the beef and sausage with other red meat. Make it a pork
sauce or double up on the beef.

Brown the meat, sausage, onion, and garlic with the olive oil. Drain fat, if desired.
Place all ingredients into slow cooker. Cover and cook on low for 8 hours. Remember
to remove bay leaves before serving.

Slow Cooker Italian Pork Tenderloin

In execution, this dish is a whole lot like the Cuban dish ropa vieja. You end up with a
tender, juicy pork.

1 pound pork tenderloin


1 cup carrots, sliced
1 cup celery, sliced
1 cup chicken broth
1 teaspoon basil
1 teaspoon oregano
1 teaspoon thyme
Salt and pepper to taste

Place all ingredients into slow cooker. Cover and cook for 8 hours on low.

Slow Cooker Mediterranean Chicken

Mediterranean cuisine always has an interesting and eclectic mix of flavors, and this
chicken is no different.

3 pounds bone-in chicken thighs


2 onions, chopped
1 15-oz can chopped tomatoes
¼ cup pitted black olives
2 tablespoons capers
2 tablespoons olive oil
Salt and pepper to taste

Brown chicken in a saucepan with olive oil. When all chicken is browned, place in
slow cooler with all ingredients. Cover and cook on low for 5 hours.

Slow Cooker Mexican Beef Roast

This recipe can either turn out somewhat mild or really spicy, depending on how you
prepare it. Cater to your own preferences.

2 lbs beef chuck roast


1 diced onion
3 cloves minced garlic
1 can diced tomatoes
1 jalapeño, de-seeded, de-veined, and diced
½ cup lime juice
1 tablespoon chili powder
1 teaspoon cumin
1 pinch cayenne pepper
Salt and pepper to taste

If you want to make this dish spicier, skip de-veining and de-seeding the jalapeño.
That’s where most of the spice in the pepper is. You also might want to try upping the
amount of cayenne you put in there.

Place all ingredients in slow cooker. Cover and cook on low for 8 hours.

Slow Cooker Queso Dip

1 pound ground beef


1 jalapeño, de-seeded, de-veined, and diced
32 oz Velveeta cheese
2 cans mild Rotel
In a skillet, brown the beef. If you want to add some seasoning, like salt, pepper, and
garlic, add to it while it’s frying. Drain, if desired, and pour beef and all other
ingredients into slow cooker. You might want to cut the Velveeta into cubes beforehand.
Cook on low for 2 hours.

You might notice that this dish is a bit higher in carbs than other dishes here. Keep in
mind that a big part of Atkins is portion control. Watch what you eat, and make sure
you’re not having too many carbs in any given day.

Slow Cooker Ropa Vieja

“Ropa vieja” is Spanish for “old clothes,” probably because of the stringy beef you’re
left with. A lot of Hispanic meat dishes are fantastic for Atkins.

2 pounds beef flank steak


1 cup beef broth
1 can tomato paste
1 can diced tomatoes
1 sliced onion
1 diced bell pepper
2 cloves minced garlic
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon cilantro
1 tablespoon vinegar
Salt and pepper to taste

Brown the meat in a saucepan on each side with the olive oil. Put all ingredients in slow
cooker, cover and cook on low for 8 hours or until desired tenderness is reached.

Slow Cooker Russian Beef Stroganoff

The name of this rich dish is presumed to have come from a member of the Stroganov
family. The American version of this dish is almost entirely different from the kind seen
in Russia.
1 pound beef for stewing
1 can cream of mushroom soup
16 ounces sour cream
1 chopped onion
1 tablespoon Worcestershire sauce
¼ cup water
Salt and pepper to taste
Add all ingredients except the sour cream to slow cooker, cover and cook on low for 8
hours. Add the sour cream and cook until blended at desired thickness.

Slow Cooker Sausage and Sauerkraut

I’ve heard this dish described as “Germany on a plate.” As far as German foods go,
these are rather quintessential.

1 ½ pounds sausage
20 oz sauerkraut
1 sliced onion

Place all ingredients in slow cooker. Cover and cook on low for 6 hours.

Slow Cooker Savory London Broil

Strangely enough, this dish is mostly unknown in England and London. It’s entirely an
American preparation.

1 ½ pounds flank steak


1 can cream of mushroom soup
2 cloves garlic, minced
½ cup water
1 teaspoon basil
1 teaspoon oregano
Salt and pepper to taste

Place all ingredients into slow cooker, cover and cook on low 8 hours.

Slow Cooker Shrimp Alfredo

In this recipe, we’ll be making a sauce that we used in a previous recipe.

1 stick butter
1 cup heavy cream
2 cups parmesan cheese
1 pound cooked shrimp, peeled and de-veined
5 oz mushrooms
3 cups broccolini florets
1 tablespoon olive oil

Prepare the sauce from the Chicken Alfredo recipe. In a saucepan, brown the shrimp
with the olive oil. Place all ingredients in the slow cooker, cover and cook on low for 8
hours.

Slow Cooker Smokey Baby Back Ribs

3 pounds baby back ribs


1 onion, sliced
1 clove garlic, minced
Zero-carb barbecue sauce (optional)
½ cup water

Place all ingredients into slow cooker except for sauce, if using it. Cover and cook on
low for 8 hours. If using barbecue sauce, transfer ribs to a baking sheet and coat with
sauce. Bake at 350 degrees Fahrenheit for 15 minutes.

Slow Cooker Southern Style Pork Roast

5 pounds boneless pork butt roast


2 onions, sliced
1 can chicken, beef, or vegetable broth
1 tablespoon garlic powder
1 tablespoon oregano
1 teaspoon salt

Rub roast with the seasonings. Place all ingredients in slow cooker. Cover and cook on
low for 8 hours.

Slow Cooker Sunday Pot Roast

Pot roasts are one of those family staples that I remember having almost every week as
a kid. This is a whole lot easier than baking it in the oven, and much juicier and much
more tender as well.

3-4 pounds chuck roast


3 onions, chopped
10 carrots, thickly chopped
1 tablespoon salt

When you’re buying the roast, make sure you get a fatty cut. I say this for pot roast in
particular because a dry pot is such a shame and such a huge waste of time and money.

Place all ingredients into crock pot. Cover and cook on low for 8-10 hours.

Slow Cooker Super Simple Roasted Chicken

Roasting chicken in a slow cooker is actually surprisingly easy.

1 whole chicken, giblets removed


2 teaspoons cumin
2 teaspoons onion powder
2 teaspoons parsley
2 teaspoons garlic powder
Salt and pepper to taste.

Depending on what kind of flavor you want in your roast, you can put the giblets in the
slow cooker or set them aside to make a sauce later. Rub the chicken with the
seasonings, inside and outside. Put chicken in slow cooker. Cover and cook on low for
6-8 hours.

If you want to keep moisture better, layer the bottom of the slow cooker with vegetables

Slow Cooker Tex Mex Beef or Chicken

2-3 pounds beef for stewing or sliced chicken


1 can diced tomatoes
4 cloves garlic, minced
1 onion, chopped
1 tablespoon chili powder

Salt and pepper to taste

Rub the meat all over with the seasonings. Place all ingredients into slow cooker. Cover
and cook on low for 6-8 hours. Serve with sour cream cheese.

Slow Cooker Thanksgiving Sage Turkey Breast

For the longest time when I was younger, I thought that I hated turkey. It just turns out
that no one had ever cooked it for me in a way that kept its moisture. Avoid that issue
with this recipe.

6 pounds bone-in turkey breast


½ cup chicken or vegetable broth
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 tablespoon sage
Salt and pepper to taste

Mix the seasonings with the olive oil, rub all over turkey, inside and out. Place in slow
cooker with broth. Cover and cook on low for 5-6 hours.

Slow Cooker Veal Chops

Veal is always a wonderful treat. It’s already incredibly tender, and the slow cooker
only helps that out.
2 pounds veal chops
1 garlic clove, minced
1 onion, sliced
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon thyme
Salt and pepper to taste.

Combine seasonings and olive oil. Rub chops all over with the mixture. Place all
ingredients into slow cooker. cover and cook on low for 6 hours.

Slow Cooker Veal Paprikash

This is a Hungarian dish, and as the name suggests it’s got a lot of paprika in it. Hungary
is actually fairly well known for its paprika, so this is naturally a classic dish.

2 pounds veal tip roast, cubed


8 ounces mushrooms
1 cup sliced carrots
1 cup diced onion
3 cloves garlic, minced
¼ cup corn starch
1 tablespoon sweet paprika
1 teaspoon thyme
1 cup sour cream

Place all ingredients in slow cooker except for sour cream. Cover and cook on low for
6 hours. Turn off slow cooker, and stir in sour cream.
