Background: Proposed Countermeasure(s):


Good service is part of the Bahama Bistro Mission Statement. We can't afford Countermeasures proposed:
to have dissatisfied customers - we'll lose them - 5S the Prep Area
- Conduct Cross-Training of all floor staff
- Redesign the order form to make special orders easy to see
- Institute Standard Work amongst all roles

Current Conditions:
It's currently taking 28 minutes on average to get lunch orders to customers.
Customers are having trouble fitting this into their lunch hours.
Implementation Plan:

Target(s)/Goal(s)
The goal is to deliver sandwiches and soups in 20 minutes or less and
entrees in 30 minutes or less by May 10th

Analysis
Some of the root causes:
- Prep area is not set up efficiently causings lots of motion and restocking
during the rush
Follow Up:
- There are bottlenecks due to specialization of roles Conduct 5S Audits and track scores on Run Chart
- The lunch order form doesn't make it easy to call out special orders which Use New Procedure Audit to check on adherence to Standard Work
leads to rework
- There is a lot of variation in the process based on the individual
