This document describes two traditional dishes from Arequipa, Peru - Soltero de Queso and Chicharrón de Chancho. Soltero de Queso is a simple dish containing beans, onion, tomato, fresh cheese, potatoes, corn, rocoto pepper and parsley. Chicharrón de Chancho includes stuffed rocoto peppers, pork rinds and brambles. While both dishes are delicious, only Soltero de Queso is considered healthy due to its lack of pork rinds.

The dish is of very simple execution, it contains rocoto, pork rinds and brambles. It is only cooked beans, onion, tomato, fresh cheese, impossible to finish it if they do not share it, cooked potatoes and corn, rocoto and chopped but when it comes to Arequipa food we are parsley. not for little ones
