Braised BBQ Beef Sandwich


Ingredients:
½ sandwich or burger buns
1/3 pound chuck roast, rinsed and dried
2 medium onions, chopped
1 tbsp olive oil
1 tomato (preferably a plum tomato?

Salt

Steps:
1. Put oive oil in a pot. Then heat it on medium heat.
2. Cook the onion for about 5 minutes. Then, add the tomato
and barbecue sauce
3. Next, add the chuck roast and cook until the meat is very
tender, for about 3 hours. Stir occasionally.
4. Transfer the meat from thepot to a plate. Then, shred the
roast into small pieces with a knife and a fork.
5. Set the heat on medium-high until the liquid becomes thicker.
Uncover the pot. Don’t forget to stir it to prevent burning.
6. Put the meat back into the pan. Warm it thoroughly. Add salt
and pepper to taste. Serve the buns.

Pesto Pasta Salad

Ingredients:
4 cups of fusilli
1 cup of fresh basil pesto
2 tbsp green olives, chopped
1/3 cup of pine nuts
1 cup of frozen peas, defrosted
12 ounces cherry tomatoes, halved
