BLACK BEAN SOUP

INGREDIENTS

Brown Beef stock : 24 Qt


Vegetable oil : 1 qt
Thyme fresh : ¼ bun
Bay leaf : ½ oz
Carrots : 4 lb
Celery : 4 hds
Onions Yellow : 10 lb
Tomatoes Fresh : 5 lb
Garlic Fresh peeled : ¼ lb
Black Beans : 10 lb
Cumin Seeds (Roasted & coarsely powdered): 3 oz
Salt : t/taste
Crushed black pepper : t/taste

Garnish
Red Onion Chopped : 1 lb
Sour Cream : 1 ea
Scallions : 2 bun
Parboiled Rice : ½ lb

PROCEDURE

 Wash and soak beans overnight.


 Simmer in beef stock with the soaking liquid, until tender. Season.
 Dice all vegetables.
 Sauté garlic and bay leaf in oil. Add diced Onion, Carrot & celery. Sauté further.
 Add to black beans and simmer.
 Add diced tomatoes and chopped thyme.
 Finish with roasted Cumin powder. Adjust seasoning.
 Serve with Chopped Red Onions, Sour Cream, Chopped Scallions and Boiled
rice.
