Question:
Emulsions are naturally unstable. During the laboratory experiment, how will you produce and make sure it is a
stable emulsion? Give 5 techniques that may be useful for you in the future.
1. By using machine one example is the Rotar / Stator mixer – It can stabilized emulsion by Mixing it.
- It sucks liquids into the workhead and forces out through the holes in the stator.
2. Increasing the electrostatic repulsion (which is long range) or steric repulsion (short range).
4. Another way to stabilized emulsion by used of hydrocolloids like Xanthum gum or guar gum.
5. Increase the amount of force imparted- This relates to the above point, as an increase in force during mixing
will help to reduce particle size. Increased force also, however, creates an emulsion that is much more well-
mixed. This is significant in that it enhances the product’s stability, which lengthens its shelf and overall
consumer satisfaction. Shear, cavitation, turbulence, and pressure are among some of the more common
forces used to mix an emulsion
