Homemade ice-cream

1. Ingredients

1.1. Condensed Milk:

1 Liter of natural Milk (as fat as possible);


1 Kg of Sugar;
100 g butter (80% fat).

Combine the milk with the sugar and boil them together up to foaming. Add the butter
under continuous mixing. Continue to warm-up slowly the composition with vigorous mixing until
the volume drops to half. The condensed milk is ready. It can be kept in glass jars inside the
fridge up to 1 month.

1.2. Whip cream:

Fermented sour cream (25% fat)

Add the sour cream in a strong blender and blend it for few minutes.

2. Icecream

500 g frozen strawberries


500 g whip cream
100 ml condensed milk
1 spoon fresh squeezed lemon juice

In a strong blender add for the beginning the condensed milk and the lemon juice. Add
the frozen strawberries. Add a part of the whip cream. Start the blender. Add the blended
mixture into the remaining whip cream and mix again. Transfer the mixture in a box, then move
the box in the freezer for minimum 2 hours. The ice-cream will be creamy and without ice
needles.
For a sweeter taste, the condensed milk amount can be increased up to 200 ml. An
alternative option is to use 100 ml condensed milk and 2 spoons with honey.
